Chicken Pot Pie with Cheese Sauce Recipe

A pot pie can make a great meal. It usually has a combination of food groups so you may not even need a side. When buying the frozen variety, it can be easily heated and served.

The prospect of making your own pot pies can be a bit more daunting. However, we have provided an easy to make a recipe that includes the addition of a delicious cheese sauce. Read on to find out more about this meal and the variations you can make for your family.

Cheese Pot Pie

If we look back in history, it seems as if the pot pie first originated in Greece. Back then, Greeks mixed meat and other ingredients in open pastry shells called Artocreas.

The Romans perfected the recipe adding a pastry crust on top making for an enclosed meat pie.

The pot pie grew in popularity and soon became a well-known American dish. Common ingredients included chicken, celery, carrots, peas, onions, and chicken broth.

You might notice that cheese or cheese sauce is not listed as a common ingredient. This may be due to the fact that cheese would not mix well with the chicken broth. However, substitutions can be made to give your pot pie an ooey, gooey goodness.

The recipe we have here does not use any chicken broth. All you need to do is toss the chicken with flour in a 2-quart casserole. Then stir in the cheese sauce and frozen vegetables.

The casserole is then topped with a store-bought pastry crust designed for a single pie. Press the pastry around the edge of the casserole, trim excess and flute the edges.

Cover with aluminum foil and bake 20 minutes. Remove foil and continue baking 20 minutes or until crust is golden and chicken is cooked through.

Unlike a lot of pot pie recipes that are made in individual servings, this makes an entire pie that can be cut into and served to the entire family.

Easy Chicken Pot Pie

As mentioned earlier, pot pies are often meals that take a lot of preparation. However, in this meal, we’ve cut down on a lot of steps to make things easier.

The most notable short cut we’ve taken is the purchasing of a store-bought pie crust. This saves home cooks the time they would spend mixing and kneading their own dough.

We also used frozen veggies eliminating the need to prepare veggies in advance.

A store-bought cheese sauce saves you the time that could be spent fixing your own sauce.

Finally, making an entire pie that can be served to your family saves you from spending time making individual servings.

Of course, there are some cooks that may argue that nothing beats a recipe where everything is made from scratch. And while we are not saying they don’t have a point, many working parents just don’t have the time to make an elaborate meal. This makes a convenient alternative.

If you are looking for other easy chicken pot pie recipes, this one from Campbell’s is recommended. It is more traditional as it does not use the cheesy sauce. It also uses a biscuit baking mix for the crust which can be a great compromise for home cooks who don’t have a lot of time but want to add a homemade touch.

To make the recipe, start by mixing ½ cup reduced-fat milk with 1 can of cream of chicken soup, 1 packet of frozen vegetables and 1 cup chicken cubed and cooked in a small bowl.

Stir another ½ cup milk with egg and the biscuit baking mix in a small bowl. Spread the batter over the chicken mix.

Bake for 20 minutes or until the top is golden brown and serve to your family for a healthy meal they are sure to love.

A pot pie makes a terrific meal because you can add any ingredients you want to provide a dish that includes all food groups and is customized to the tastes of your hungry crew. There is rarely a need for a side, but if you are looking for a heartier meal, you can add rice, additional veggies or a nice light salad. Then look forward to serving them something that is sure to put a smile on their faces.

Ingredients

  • 1 pound boneless, skinless chicken breast halves, cut into 1/2-inch chunks
  • 1 Tablespoon all-purpose flour
  • 1 jar (1 pound) Ragu Double Cheddar Sauce
  • 16 ounces frozen mixed vegetables, thawed
  • 1 refrigerated pastry for single-crust pie

Instructions

  1. Preheat oven to 425°F.
  2. In 2-quart casserole, toss chicken with flour. Stir in cheese sauce and vegetables.
  3. Cover casserole with prepared pastry. Press pastry around edge of casserole to seal; trim excess pastry, then flute edges.
  4. Cover with aluminum foil and bake 30 minutes. Remove foil and continue baking 20 minutes or until crust is golden and chicken is thoroughly cooked.
  5. Let stand 5 minutes before serving.
