Starbucks Pumpkin Scones Recipe

Perfect for a fall morning, these pumpkin scones are so moist and flavorful you’ll be wanting to make them year round. They'll taste just like the ones you get from Starbucks without standing in line. 

Scones Ingredients:

2 cups all-purpose flour
7 Tablespoons sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
6 Tablespoons cold butter
1/2 cup canned pumpkin
3 Tablespoons half-and-half
1 large egg

Sugar Glaze Ingredients:

1 cup powdered sugar
1 Tablespoon powdered sugar
2 Tablespoons whole milk

Spiced Glaze Ingredients:

1 cup powdered sugar
3 Tablespoons powdered sugar
2 Tablespoons whole milk
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 pinch ginger
1 pinch ground cloves

Scones Directions:

1. Preheat oven to 425 degrees F.

2. Lightly grease a cookie sheet or line with parchment paper.

3. Combine flour, sugar, baking powder, salt, and spices in a large mixing bowl.

4. With a fork, pastry knife, or food processor, cut butter into the dry ingredients until mixture is crumbly and no chunks of butter remain. Set aside.

5. In a separate mixing bowl, whisk pumpkin, half and half, and egg.

6. Fold wet ingredients into dry ingredients. Form the dough into a ball.

7. Pat out dough onto a lightly floured surface and form it into a 1-inch thick rectangle (about 9 inches long and 3 inches wide).

8. Use a large knife to slice the dough into three equal portions. Cut diagonally to produce 6 triangular slices of dough.

9. Place on prepared baking sheet from step 2.

10. Bake for 14–16 minutes until scones turn light brown.

11. Place on wire rack to cool.

 

Sugar Glaze Directions:

1. Mix the powdered sugar and 2 Tablespoon milk together until smooth.

2. Brush glaze over the top of each cooled scone.

 

Spiced Glaze Directions:

1. As sugar glaze firms, combine the spiced icing ingredients.

2. Use whisk to drizzle over each scone and allow to dry before serving.

Makes 6 pumpkin scones.

 

 

 

Blueberry Monkey Bread

This monkey bread recipe is variation of the very popular and incredibly tasty cinnamon monkey bread. It features sweet blueberries and vanilla for flavor. Make this simple family favorite for breakfast or an anytime treat, it won't last long!

Ingredients:

1 1/3 cups white sugar, divided into two 2/3 cup measures
1 Tablespoon ground cinnamon
4 (10 ounce) cans refrigerated buttermilk biscuit dough
1 1/4 cups frozen blueberries, dry pack
10 Tablespoons butter
1 teaspoon vanilla extract
1 Tablespoon ground cinnamon
1 cup frozen blueberries, dry pack

Directions:

1. Preheat oven to 350 degrees F. Thoroughly grease a 10 x 4 inch tube pan.

2. Mix 2/3 cup sugar and cinnamon. Cut biscuits in quarters, then roll each piece in sugar-cinnamon mixture.

3. Arrange about 1/4 of the biscuit pieces and blueberries in an even layer in pan.

4. Place blueberries between biscuit pieces, creating a mosaic effect. Repeat three times with remaining biscuits and blueberries, covering blueberries of one layer with biscuits in next layer.

5. In saucepan combine the second 2/3 cup sugar, butter, vanilla, cinnamon, and the additional cup of blueberries. Bring to a boil, then reduce heat. Cook, stirring frequently until sugar is dissolved and butter is melted.

6. Pour over biscuits in pan.

7. Bake for 35 minutes or until done. Lift or turn out onto a cake plate.

Day 9 - stir

Day 10 - Add 1 cup flour, 1 cup sugar and 1 cup milk. Divide into 4 containers, with 1 cup each for three of your friends and 1 cup for your own loaves. Give friends the instructions for Day 1 through Day 10 and the following recipe for baking the bread.

After removing the 3 cups of batter, combine the remaining cup of Amish Friendship Bread starter with the following ingredients in a large bowl:

2/3 cup oil
3 eggs
1/2 tsp. salt
1 tsp. vanilla
1 to 1 1/2 tsp. cinnamon
1 cup sugar
2 cups flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda

Using a fork beat by hand until well blended. You can add 1 cup raisins and 1 cup nuts (optional).

Grease two loaf pans with butter, sprinkle with sugar instead of flour.

Bake at 325 degrees F for 45 minutes to 1 hour (individual oven temperatures vary). Cool 10 minutes, remove from pans. Makes two loaves of Amish Friendship Bread.

Amish Friendship Bread Starter

This is the Amish Friendship Bread Starter Recipe that you’ll need to make the Amish Friendship Bread (above). It is very important to use plastic or wooden utensils and plastic or glass containers when making this. Do not use metal at all!

Ingredients:

1 pkg. active dry yeast
1/4 cup warm water (110 degrees F)
1 cup all-purpose flour
1 cup white sugar
1 cup warm milk (110 degrees F)

Directions:

1. In a small bowl, dissolve the yeast in warm water for about 10 minutes. Stir well.

2. In a 2 quart glass or plastic container, combine 1 cup sifted flour and 1 cup sugar. Mix thoroughly or the flour will get lumpy when you add the milk.

3. Slowly stir in warm milk and dissolved yeast mixture. Loosely cover the mixture with a lid or plastic wrap. The mixture will get bubbly. Consider this Day 1 of the cycle, or the day you receive the starter.

For the next 10 days handle starter according to the instructions above for Amish Friendship Bread.

Banana Nut Amish Friendship Bread

When making the basic recipe, reduce oil to 1/3 cup. Omit cinnamon.

Increase vanilla extract to 1 1/2 teaspoons.

Add 3 large very ripe bananas, mashed (banana skins should be almost black) and 1/2 cup chopped nuts.

Chocolate Amish Friendship Bread

Omit cinnamon from the basic recipe and add 1 (5.1 oz) box of instant chocolate pudding, an additional 1/2 cup milk, 3 tsp. cocoa and 3/4 cup chocolate chips.

Bake for 1-1/2 to 1-3/4 hours.

Carrot Cake Amish Friendship Bread

Increase the cinnamon in the basic recipe to 1 Tablespoon.

Add to the basic recipe the following ingredients:

3 medium carrots shredded
1/2 cup raisins
1/2 cup chunky homestyle applesauce
1 teaspoon nutmeg
1/2 teaspoon clove
1/2 cup chopped walnuts

Use a a bundt pan instead of a loaf pan. Bake until a wooden toothpick inserted in the center comes out clean.

Can be frosted with cream cheese frosting.

Ingredients:

2 cups all-purpose flour
1 cup white sugar

1 cup buttermilk
1/4 cup vegetable oil
2 eggs
2 teaspoons vanilla extract
2 Tablespoons brown sugar
1 teaspoon ground cinnamon
2 teaspoons butter

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.

2. Measure flour, 1 cup sugar, baking powder, baking soda, 1 1/2 teaspoons cinnamon, salt, buttermilk, oil, eggs and vanilla into large mixing bowl.

3. Beat 3 minutes. Pour into prepared loaf pan. Smooth top.

4. Combine 2 tablespoons brown sugar, 1 teaspoon cinnamon and butter, mixing until crumbly. Sprinkle topping over smoothed batter. Using knife, cut in a light swirling motion to give a marbled effect.

5. Bake for about 50 minutes. Test with toothpick. When inserted it should come out clean. Remove bread from pan to rack to cool.

Easy Pumpkin Scones Recipe

2 cups zucchini, grated and well drained

3/4 teaspoon nutmeg
1 Tablespoon cinnamon
1/2 cup raisins (optional)

Directions:

1. Mix together eggs, oil, sugar, zucchini, and vanilla; set aside.

2. Mix together flour, baking powder, soda, nutmeg, and cinnamon; add to first mixture. Add raisins if desired.

1 cup currants or raisins

Directions:

1. Cream together butter and sugar. Add the eggs and mix well.

2. In a separate bowl, stir together the flour, baking powder, salt and baking soda.

3. Add the flour mixture, one cup at a time, to the buttermilk. Stir.

4. Add currants or raisins and mix well.

5. Grease loaf pans. Bake at 350 degrees F for 60 minutes or until tester comes clean.

Cinnamon Roll Recipe

Both of these homemade cinnamon rolls recipes are a piece of heaven in every roll. Filled with cinnamon and brown sugar and frosted with cream cheese icing, they are absolutely decadent.

The first is a recipe without yeast; it is every bit as good as the second recipe which includes yeast and rising time. We tested 12 differerent cinnamon rolls recipes, then took the best elements from all of them to come up with the perfect cinnamon rolls...with and without yeast in the recipe.

Personal preference and how much time you have are the deciding factors when choosing between the two recipes for cinnamon rolls. Some bakers swear by yeast rolls, others swear by skipping the yeast when it comes to sweet rolls.

The folks at King Arthur Flour say this:

Yeast, with the long, slow rise it demands, adds inimitable flavor to breads of all kinds. But sometimes it’s just not necessary.

Sweet rolls are potentially one of those times.

Whichever recipe you choose, you won't be disappointed (we loved them both)!

Tip: For easier slicing of the dough, use unflavored dental floss. Slide it under the rolled dough then cross over the top of the roll to cut through.

Cinnamon Rolls (recipe without yeast)

Ingredients:

Rolls:

2 1/2 cups all purpose flour, plus extra for the counter
2 Tablespoons white granulated sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
6 Tablespoons unsalted butter, melted

Cinnamon Filling:

3/4 cup packed dark brown sugar
1/4 cup white granulated sugar
3 teaspoons cinnamon
1/8 teaspoon salt
1 Tablespoon unsalted butter, melted

Cream Cheese Frosting:

8 oz cream cheese
1/2 cup butter
1 teaspoon vanilla
3 cups confectioner's sugar
1 Tablespoon milk
**To make frosting, mix all ingredients until smooth.

Directions:

1. Preheat the oven to 425 degrees F. Generously coat a 9 inch round cake pan and a wire cooling rack with vegetable oil spray.

2. Make the filling: combine together the brown sugar, 1/4 cup granulated white sugar, cinnamon, salt, and the 1 Tablespoon melted butter until the mixture resembles wet sand.

3. Make the dough: In a large bowl, whisk together the flour; 2 Tablespoons white granulated sugar, baking powder, baking soda, and salt.

4. In a separate bowl, whisk the buttermilk and 2 Tablespoons of the melted butter together.

5. Stir the buttermilk mixture into the flour mixture with a wooden spoon until absorbed, about 30 seconds. The dough will look shaggy.

6. Turn the dough out onto a generously floured counter and knead until smooth, about 1 minute.

7. Press the dough out into a 9 by 12 inch rectangle using your hands.

8. Brush the dough with 2 Tablespoons melted butter. Sprinkle the dough evenly with the filling, leaving a 1/2-inch border. Press the filling firmly into the dough.

9. Loosen the dough from the counter using a bench scraper or a metal spatula.

10. Starting at a long side, roll the dough, pressing lightly, to form a tight log.

11. Pinch the seam to seal. Slice the dough into 8 even pieces.

12. Place the slices in the greased pan.

13. Brush with the remaining 2 Tablespoons melted butter. Bake until the edges are golden brown, 20-25 minutes.

14. Use a knife to loosen the buns from the pan. Flip the buns out onto the prepared wire rack, then turn buns upright and let cool for 10 minutes before frosting with cream cheese icing. Prepare the icing while rolls are cooling.

 

 

Cinnamon Rolls (recipe with yeast)

Ingredients:

3/4 cup whole milk, warmed (110 degrees)
1 envelope (2 1/4 teaspoon) instant or rapid-rise yeast
3 large eggs, room temperature
4 1/4 cups all-purpose flour
1/2 cup cornstarch
1/2 cup granulated sugar
1 1/2 teaspoons salt
12 Tablespoons unsalted butter, cut into 12 pieces and softened to room temperature

Filling Ingredients:

1 1/2 cups packed light brown sugar
1 1/2 Tablespoons ground cinnamon
1/4 teaspoon salt
4 Tablespoons unsalted butter, softened

Cream Cheese Frosting:

8 oz cream cheese
1/2 cup butter
1 teaspoon vanilla
3 cups confectioner's sugar
1 Tablespoon milk
**To make frosting, mix all ingredients until smooth.

Directions:

1. Adjust oven rack to middle position and heat oven to 200 degrees F. When the oven reaches 200 degrees, turn off.

2. Line a 13-by-9-inch baking pan with foil, allowing excess foil to hang over pan edges. Grease foil and a medium bowl.

3. Whisk milk and yeast in measuring cup until yeast dissolves, then whisk in eggs.

4. In the bowl of stand mixer fitted with a dough hook, mix flour, cornstarch, sugar, and salt until combined.

5. With mixer on low, add warm milk mixture in steady stream and mix until dough comes together, about 1 minute.

6. Increase speed to medium, and add butter, one piece at a time, until incorporated. Continue to mix until dough is smooth and comes away from the sides of the bowl, about 10 minutes.

7. Turn dough out onto clean surface and knead to form a smooth, round ball.

8. Transfer dough to prepared bowl, cover with plastic wrap, and place in warm oven. Let rise until doubled in size, about 2 hours.

9. Combine brown sugar, cinnamon, and salt in small bowl.

10. Turn dough out onto lightly floured surface. Roll dough into 18-inch square, spread with butter, and sprinkle evenly with the filling.

11. Starting with the edge nearest you, roll dough into tight cylinder, pinch to seal seam, and cut into 8 even rolls.

12. Transfer rolls, cut-side up, to prepared pan. Cover with plastic wrap and let rise in warm spot until doubled in size.

13. After rolls are done rising, heat oven to 350 degrees F.

14. Discard plastic wrap and bake rolls until deep golden brown and filling is melted, 35 to 40 minutes.

15. While rolls are baking, make the frosting.

16. When cinnamon rolls are done baking, transfer pan to a wire rack and cool 30 minutes.

17. Using the excess foil overhang, lift rolls from pan and frost with cream cheese frosting before serving.

Ingredients:

4 cups self-rising flour
1 Tablespoon sugar
1 Tablespoon baking powder
2 cups buttermilk
2/3 cup shortening

Makes 20 biscuits

 

Biscuit Directions:

1. Mix all ingredients together, but do not knead. Roll out to 1" thick.

2. Cut with biscuit cutter and brush tops with additional buttermilk.

3. Place on greased cookie sheet. Bake at 400 degrees F for 15 minutes.

Banana Nut Bread

Ingredients:

½ cup shortening
2 cups sugar
2 eggs
3 mashed bananas
3 cups flour
1 teaspoon baking soda
½ cup buttermilk
2/3 cup chopped nuts

Directions:

1. Cream together the shortening and sugar.

2. Add the eggs and bananas.

3. Combine the flour and the baking soda.

4. Add the buttermilk alternately with flour to the banana mixture.

5. Add chopped nuts.

6. Mix well and pour into 2 greased pans.

7. Bake at 325 degrees F for 1 hour or until a toothpick inserted into the center comes out clean.
