Oatmeal Cookie Muffins
Muffins that taste like oatmeal cookies are perfect for mornings when you need an extra dose of homemade comfort.
Ingredients:
1/2 cup very soft butter
3/4 cup packed brown sugar
1 egg
1 cup flour
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 cup applesauce
1 cup quick dry or regular oats
1/2 cup raisins
Directions:
1. Cream together the butter and the brown sugar. Add egg and mix well.
2. Mix the dry ingredients together, add to butter and sugar, mix in the applesauce, then the oats. Add the raisins last.
3. Bake at 350 degrees for 25 minutes. Best served warm.
