Lemon Chicken Orzo Soup

Lemon Chicken Orzo Soup

 

Ingredients:

4 teaspoons olive oil
8 ounces skinless, boneless chicken breast halves, cut into small chunks
Pinch of salt, plus more taste
1 medium onion, diced (about 1 ½ cups)
2 stalks celery, diced (about ½ cup)
2 teaspoons chopped fresh thyme or ½ teaspoon dried
6 cups low-sodium chicken broth
1 cup orzo, preferably whole-wheat
2 large eggs
3 tablespoons fresh lemon juice
Freshly ground black pepper to taste

Directions:

1. Heat 2 teaspoons oil in a soup pot over medium-high heat. Season the chicken with salt, add it to the pot, and cook, stirring, a few times, until just cooked through, about 5 minutes. Transfer to a dish and set aside.

2. Add the remaining 2 teaspoons olive oil to the pot, add the onion, celery, carrot, and thyme and cook, stirring, over medium-high heat until the vegetables are tender, about 5 minutes.

3. Add 5 cups of the broth and bring to a boil.

4. Add the orzo and let simmer until tender, about 8 minutes. Turn the heat down to low to keep the soup hot but not boiling.

5. Warm the remaining 1 cup broth in a small saucepan until it is hot but not boiling.

6. In a medium bowl, beat the eggs.

7. Gradually whisk the lemon juice into the eggs.

8. Then gradually add the hot broth to the egg-lemon mixture, whisking all the while.

9. Add the egg-lemon-broth mixture to the soup, stirring well until the soup is thickened. Do not let the soup come to a boil.

10. Add the cooked chicken to the soup. Season with salt and pepper and serve.

Chicken Chop Suey

Chicken Chop Suey

Ingredients:

1 tablespoon sesame seeds
1½ teaspoons cornstarch
1 tablespoon dry sherry
8 (2 inch) square wonton skins, separated
1 tablespoon plus 2 teaspoon canola oil
¼ teaspoon salt
2 scallions (white and green parts), thinly sliced
3 garlic cloves, sliced
4 cups cored and thinly sliced napa cabbage
¾ cup thinly sliced celery
1 (8 ounce) bamboo shoots, drained and cut into thin strips
2 cups (about 6 ounces) shiitake mushrooms, wiped clean, stems discarded, and caps thinly sliced
¾ teaspoon sugar
1 cup low-sodium chicken broth
1½ tablespoons low-sodium soy sauce
2 tablespoons toasted sesame oil
2 cups cubed or shredded cooked chicken
2 cups hot cooked brown rice

Directions:

1. Preheat the oven to 375°F. 

2. Toast the sesame seeds in a small dry skillet over medium-high heat, stirring frequently, until lightly colored, about 2 minutes; set aside.

3. In a small cup, dissolve the cornstarch in the sherry; set aside.

4. Brush a baking sheet and the wonton skins lightly on both sides with 2 teaspoons of the canola oil. Season with salt and bake until browned and crisp, 10 to 12 minutes. Transfer to a rack and set aside.

5. In a heavy skillet or wok, heat the remaining 1 tablespoon canola oil over medium-high heat. Add the scallions, garlic, cabbage, celery, bamboo shoots, and mushrooms and stir-fry until the cabbage is soft and wilted, 3 to 4 minutes.

6. Add the sugar, ¾ cup of the broth, the soy sauce, and sesame oil and cook for 3 minutes.

7. Add the sherry-cornstarch mixture and, if the mixture is a little dry, the remaining ¼ cup broth. Add the chicken and heat through.

8. Serve over the cooked brown rice and sprinkle with the sesame seeds and crush the wonton skins on top.

Baked Crispy Chicken

Ingredients:

1 chicken, cut into pieces
1 cup cornflake crumbs (unsweetened)
1/2 teaspoon ground pepper
1 teaspoon salt
1/2 cup evaporated milk, undiluted

Directions:

1. Preheat oven to 350F.

2. On a sheet of wax paper combine the cornflake crumbs, salt and pepper.

3. Place evaporated milk into a shallow bowl and dip the chicken in it,  then roll in seasoned crumbs.

4. Place chicken skin side up, in a baking pan.

5. Bake uncovered for 1 hour, or until cooked through.

Ginger Peach Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 (18 oz.) can peach halves in juice (reserve 2 Tablespoons peach juice)
2 teaspoons honey
1/2 teaspoon garlic salt
1/2 teaspoon ground ginger

Directions:

1. Place chicken in baking dish and arrange peach halves in between.

2. Drizzle honey and the reserved peach juice over the top.

3. Sprinkle with garlic salt and ginger.

4. Bake at 325 degrees F for 45 minutes or until chicken is no longer pink inside.

Thyme Chicken Breasts

Ingredients:

4 boneless chicken breasts
1 stick butter
Thyme
sliced fresh mushrooms
1/2 pint whipping cream
Salt & pepper to taste

Directions:

1. Melt stick of butter in skillet.

2. Fry chicken in butter until golden brown.

3. Remove chicken from skillet and sprinkle with thyme.

4. Saute mushrooms in butter in skillet.

5. Return chicken to skillet with mushrooms. Pour cream over chicken and mushrooms.

6. Cook until cream thickens and browns.

Sour Cream and Chicken Enchiladas

Ingredients:

6 boneless chicken breasts
8 flour tortillas
8 oz. sour cream
1 jar picante sauce
2 cups Monterey Jack cheese

Directions:

1. Boil chicken breasts. Cut into slices. (If using pre-sliced stir-fry chicken, cook slices in a skillet until done)

2. Simmer chicken in picante sauce.

3. Lightly spread butter on flour tortillas. Stuff tortillas with chicken mixture.

4. Lay open side face down in casserole dish. Cut slices in top of tortillas.

5. Spread sour cream, then cheese on top of tortillas.

6. Bake at 350 degrees F about 20-30 minutes until cheese is melted.

Mexican Chicken Casserole

Ingredients:

6 chicken breasts, boneless
10 oz. Velveeta cheese
1 can cream of mushroom soup mixed with 1 cup milk
1 can Rotel tomatoes
1 bag Doritos tortilla chips

Directions:

1. Boil chicken until cooked throught.Cut into bite sized pieces.

2. Combine Velveeta, soup mixture and tomatoes; bring to a boil.

3. Add chicken and simmer 5-10 minutes, stirring often.

4. Place a layer of Doritos in long casserole dish, then add a layer of the chicken mixture.

5. Add another layer of chips, another layer of the chicken mixture, ending with chips on top.

6. Bake at 350 degrees F for 30 minutes.

Ingredients:

1 pound spiral macaroni
1 package frozen, chopped broccoli
1 pound chicken, cubed
1 can mushroom pieces
2 sticks butter, melted
Garlic powder to taste

Directions:

1. Cook and drain macaroni. Set aside.

2. Cook broccoli according to directions. Drain and set aside.

3. Fry chicken cubes until cooked through.

4. Add chicken, broccoli, mushrooms, and melted butter to macaroni and season to taste with salt, pepper, and garlic powder.

Ingredients:

1 jar spaghetti sauce (any variety)
4 cups cooked ziti (6 oz. uncooked)
1 1/2 cups cubed cooked chicken
1 cup shredded Mozzarella cheese
1 Tablespoon grated Parmesan cheese

Directions:

1. In a 2 quart casserole stir together spaghetti sauce, cooked ziti, chicken, and 1/2 cup Mozzarella.

2. Sprinkle with rest of Mozzarella and Parmesan cheese.

3. Bake at 350 degrees F for 30 minutes or until hot and bubbling.

Pineapple Glazed Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 (15 oz.) can chunk pineapple
Salt and pepper
2 Tablespoons butter
1/4 cup packed brown sugar

Directions:

1. Salt and pepper chicken breasts, brown in butter over medium heat.

2. When browned add pineapple and sugar.

3. Continue cooking until liquid is thickened and forms a sauce. Serve over rice.

Mozzarella Chicken

Plain chicken doesn't need to go through a 20 step process with a hundred ingredients to taste good. This recipe has only five ingredients but they work well together to deliver great taste in an easy weeknight dinner favorite. Perfect for all the cheese lovers in your family!

 

Ingredients:

4 whole chicken breasts (boneless)
4 eggs
Italian breadcrumbs
1 1/2 sticks butter (add more as needed, butter reduces with cooking)
1/2 lb. Mozzarella cheese
1/2 lb. fresh mushrooms (optional)

 

Directions:

1. Slice chicken breasts into serving size pieces. Place chicken in slightly beaten egg for 1 hour and refrigerate.

2. If using mushrooms, sauté and set aside.

3. Roll chicken pieces in breadcrumbs and fry in butter until brown (about 10 minutes). Add additional butter as needed for frying.

4. Place chicken in 9 x 13 dish and place mushrooms on top (if using).

5. Bake for 10 to 15 minutes in a preheated 325 degree oven.

6. Remove from oven, place Mozzarella cheese cheese on top.

7. Place chicken back in oven until cheese melts.

Crock Pot Chicken Continental

1 (2 1/4 oz.) package dried beef, rinsed
4 chicken breasts, halved and boned
8 slices smoked, lean bacon
1 (10 3/4 oz.) can cream of mushroom soup
1/4 cup sour cream mixed with 1/4 cup flour

Directions:

1. Arrange dried beef on bottom of greased crockpot.

2. Wrap each piece of chicken with astrip of bacon and place on top of the dried beef.

3. Mix soup with sour cream and flour mixture. Pour over chicken.

4. Cover and cook on low 7 to 9 hours.

1/2 cup butter, melted

Directions:

1. In a medium bowl; combine butter, honey, mustard and curry. Mix well to blend.

2 Tablespoons olive oil for browning chicken
2 1/2 to 3 lb. chicken, cut into serving pieces
1 (14 oz.) can whole tomatoes, peeled, undrained
1 (4 1/2 oz.) jar sliced mushrooms, drained
1 garlic clove, minced
1 envelope Lipton Recipe Secrets onion soup mix

Directions:

1. In a 12 inch skillet, heat oil and brown the chicken; drain.

2. Stir in tomatoes, mushrooms and garlic combined with soup mix.

3. Simmer covered for 45 minutes or until chicken is tender. Serve, if desired, over hot noodles.

Ingredients:

1 cup celery, chopped
2 cups cooked chicken, chopped
1 can cream of mushroom soup
1/2 cup milk
3 cups potato chips, crushed
grated cheese (optional)

Directions:

1. Mix celery and chicken together.

2. Place 1/2 of this mixture in an ungreased baking dish.

3. Spoon ½ can of mushroom soup and 1/4 cup milk over the chicken mixture.

4. Sprinkle 1 1/2 cups crushed potato chips over all.

5. Repeat layers one more time. If using grated cheese, sprinkle on top.

6. Bake 30 minutes at 350 degrees F.

4 whole chicken breasts, boiled
2 cans cream of chicken soup mixed with 1 cup chicken broth
3/4 to 1 pound Swiss cheese, thinly sliced
1/2 cup butter
2 cups Pepperidge Farm stuffing

Directions:

1. Chop chicken up into bite-size pieces.

2. Layer in bottom of 13 x 11-inch baking dish.

3. Pour soup mixture over chicken. Cover with cheese slices.

Ritzy Chicken

Ingredients:

6 boneless, skinless chicken breasts
1 sleeve of Ritz round crackers
garlic salt
ground black pepper
6 teaspoons butter

1. Run the crackers through a food processor or crush with a rolling pin until they are very fine.

2. Rinse each chicken breast under cold water, roll in the crushed crackers, and placed in a greased 13 x 9 inch baking dish.

3. Sprinkle with garlic salt and pepper. Place a teaspoon of butter on top of each chicken breast.

4. Bake at 350 degrees F for one hour or until chicken is no longer pink inside.

Directions:

Chicken in Orange Sauce

Ingredients:

4 skinless boneless chicken breasts
3/4 cup orange juice
1/4 cup brown sugar
1/2 teaspoon ginger
2 Tablespoons soy sauce

Directions:

1. Combine orange juice, brown sugar, ginger and soy sauce in a microwave safe bowl.

2. Heat until just warm, about 1 minute on high.

3. Place chicken in a baking dish and cover with sauce.

Ingredients:

4 boneless, skinless chicken breasts
4 slices American or cheddar cheese
1 can cream of chicken soup 
1/4 soup can water
2 cups cooked Stove Top stuffing

Directions:

1. Place chicken in baking dish. Layer cheese on top.

2. Mix soup and water, place on top of cheese.

3. Spread stuffing on top. Bake uncovered at 350 degrees for 45 minutes or until chicken is no longer pink inside.

2 Tablespoons Olive oil
1 cup sliced Portobello mushrooms
2 garlic cloves, minced

2/3 cup dried bread crumbs
1 (0.4 ounce) package buttermilk ranch salad dressing
1 teaspoon dried basil leaves
1/3 cup sour cream
4 boneless, skinless chicken breasts

Directions:

1. Combine bread crumbs, basil and salad dressing mix in shallow dish. Combine well.

2. Place sour cream in another dish.

3. Dip boneless, skinless chicken breasts in sour cream to coat well.

4. Roll coated chicken in bread crumb mixture, pressing to coat.

5. Place on baking pan and bake at 400 degrees F for 18-24 minutes.

1-1/2 pounds boneless, skinless chicken breasts, sliced
1/2 cup zesty Italian salad dressing
1 teaspoon dried Italian seasoning

4 potatoes, cubed

Directions:

Only four ingredients create a tender, tangy chicken dinner in no time. If you're watching your sugar, you can easily substitute diet soda (diet dr. pepper works well) for the regular Coca-Cola in this recipe. Ingredients:

4 skinless, boneless chicken breast halves
1 12 oz. can Coca-Cola
1/2 cup ketchup
1/4 cup honey barbecue sauce

 


Directions:
