Tortilla Rollups are a fun way to wrap up something yummy. Just take a small tortilla and warm it in the microwave for a few seconds. Choose one or more fillings, such as jelly, peanut butter, ham, cheese, or salsa. Wrap the tortilla into a tube shape while it is still warm. If you need to melt cheese, put some thin slices or shreds of cheese on the tortilla and melt before you try to wrap it.
Cheesecake Apple Dippers
Cheesecake Apple Dippers are delicious fruity bites. Wash, slice, and core one or two apples. Mix about three tablespoons of ready-to-eat cheesecake filling with one tablespoon of milk per child. Put each cheesecake mixture serving in a small bowl. Put one tablespoon of brown sugar in a separate small bowl or muffin tin. Dip your apple slices in the cheesecake mixture, then the sugar, and enjoy.
Mini Pizzas are popular snacks or small meals. Start by preheating the oven or toaster oven on low to medium heat. Cut a bagel in half and spread pizza sauce on top. Add favorite toppings, shredded mozzarella cheese, and flavorful herbs (oregano and basil). Place your pizza on a baking sheet and put in the oven for 5-8 minutes. Watch for the cheese getting bubbly.
Blueberry Apple Crisp
Blueberry Apple Crisp is a scrumptious way to get whole grains and fruit. Preheat your oven to 400 degrees. Blend the following ingredients: ½ C brown sugar, 2 tsp lemon juice, ¼ C water, and ½ tsp cinnamon. Core, slice, and peel three apples. Blend apple slices with 1 C frozen blueberries, and then blend with sugar/lemon juice mix. Place filling in greased 9” baking dish.
Create the topping by mixing another ½ C brown sugar, ¾ C flour, ¼ tsp salt, and 1/3 C old-fashioned rolled oats together. Blend with ¼ C butter until crumbly. Spread topping evenly over filling and bake for 30-40 minutes. Cool for about a half hour before serving.
Fruit Smoothies are a treat at any time of year, especially in warm weather. Try an easy banana smoothie by blending one banana, 1 C milk, 1 C yogurt, and four large strawberries until smooth. Chill in refrigerator if preferred. Or, make a berry smoothie by blending one banana, 1 C berries of your choice, ½ C yogurt, and ½ C ice. Put this mixture in the blender and blend until smooth.
