Best Chili

Ingredients:

2 1/2 lb. lean chuck, ground
1 lb. lean pork, ground
4 garlic cloves, finely chopped
1 cup finely chopped onion
8 oz. hunt's tomato sauce
1 cup water
1 can beer (12 oz.)
3 Tablespoons chili powder
2 Tablespoons instant beef bouillon (or 6 cubes)
2 Tablespoons cumin, ground
2 teaspoons paprika
2 teaspoons oregano leaves
2 teaspoons sugar
1/2 teaspoon coriander, ground
1 teaspoon unsweetened cocoa
1/2 teaspoon Louisiana hot sauce
1 teaspoon cornmeal
1 teaspoon flour
1 teaspoon warm water


Directions:

1. In a large saucepan brown 1 1/4 pounds of the ground meat (the beef and the pork), drain the fat.

2. Remove meat (the beef and the pork). Brown the rest of the ground meat, drain all but 2 tablespoons of the fat.

3. Add the garlic and onion, cook and stir until tender.

4. Add the other half of the meat and the tomato sauce, water, beer, chili powder, bouillon, cumin, paprika, oregano, sugar, coriander, cocoa, and hot sauce. Mix well.

5. Bring to a boil then reduce heat and simmer, covered , for 2 hours.

6. In a small bowl, stir together the cornmeal and flour, then add the warm water and mix well.

7. Stir into chili and cook, covered, for an additional 20 minutes.

Farmhouse-Sausage-Chili

Ingredients:

1 pound pork sausage
1 large onion, chopped
1 celery stalk, diced
1 28 ounce can whole tomatoes, chopped
2 cups tomato juice or chicken broth or a mixture of the two
1 to 2 Tablespoons maple syrup or molasses
2 teaspoons ground cumin
1 ½ teaspoon powdered sage
½ teaspoon ground black pepper
3 ½ to 4 cups cooked red kidney beans, drained and rinsed

Directions:

1. Brown in a large skillet the pork sausage and the chopped onion

2. Toward the end of the browning, add the celery

3. When the celery is softened, add tomatoes, tomato juice or chicken broth, maple syrup or molasses, cumin, sage and black pepper

4. Simmer for 20 minutes.

5. Add the red kidney beans

6. Simmer for 15 minutes more.

7. Serve with sharp cheddar cheese, cubed and cornbread or buttermilk biscuits.

Chili Ingredients:

1 pound ground chuck
2 medium onions, chopped
1 medium green bell pepper, seeded and chopped
1 clove garlic, chopped
1 can Chopped jalapenos (4 ounces)
2 (14-ounce) cans Mexican-style stewed tomatoes
1 (15-ounce) can kidney beans, drained and rinsed
2 Tablespoons chili powder
1 teaspoon salt
freshly ground black pepper

Topping Ingredients:

grated sharp cheddar
sour cream
sliced green onions (white and green parts)
corn chips

Directions:

1. Brown the ground chuck over medium heat in a Dutch oven.

2. Add the onions and green pepper and continue to cook until the meat is completely browned and the onions and peppers are tender.

3. Add garlic and jalapenos and cook until fragrant. Drain of any fat and discard.

4. Stir in the tomatoes, beans, chili powder and salt. Bring the mixture to a boil, cover, and reduce the heat to low.

5. Simmer for 35 minutes. Season with ground black pepper. Garnish with shredded Cheddar, sour cream, sliced green onions, and crumbled corn chips.

Chili Ingredients:

1 pound ground turkey
1 onion, chopped
1 large green bell pepper, chopped
1 16 ounce can kidney beans, rinsed and drained
1 10 ounce package whole kernel corn, frozen, thawed
1 16 ounce can tomato sauce
1 16 ounce can diced tomatoes, undrained
1 4 ounce can chopped chilies
2 Tablespoons chili powder
1 teaspoon salt
1 teaspoon cumin
½ teaspoon sugar
½ teaspoon garlic powder

 

Corn Bread Biscuits Ingredients:

1 cup all-purpose flour
1 cup cornmeal
2 Tablespoons baking powder
⅛ teaspoon salt
1 egg
½ cup milk
½ cup sour cream

 

 

Directions:

1. In a Dutch oven over medium heat, cook beef, onion and green pepper until meat is no longer pink; drain.

2. Add remaining ingredients; bring to a boil, stirring occasionally. Reduce heat; cover and simmer for 10 minutes.

3. Meanwhile, combine flour, cornmeal, baking powder and salt in a bowl.

4. Beat egg, milk and sour cream until smooth; stir into dry ingredients just until moistened.

5. Transfer chili to an ungreased 13 by 9 by 2 inch baking dish.

6. Drop batter by heaping teaspoonfuls onto hot chili.

7. Bake, uncovered, at 400 degrees F for 15 to 17 minutes or until biscuits are lightly browned.

Ingredients:

2 pounds chuck steak, cubed in bite-size pieces
1 pound hot Italian sausage, removed from casings
2 large onions, diced
12 cloves garlic, diced
1 Tablespoon ground cumin
1 Tablespoon paprika
1 Tablespoon pure chili powder
1 can (32 ounce size) crushed tomatoes
1 can (16 ounce size) pinto beans
1 can (16 ounce size) Northern beans
1 can (16 ounce size) dark red kidney beans
chopped scallions
sour cream
shredded Cheddar cheese

Directions:

1. Brown the beef and sausages in a large Dutch oven. Remove the meat and reserve.

2. Drain off the fat, reserving about two Tablespoons.

3. Sauté the onions and garlic until translucent, about 7 minutes.

4. Add the cumin, paprika and chili powder. Add the tomatoes and the beef into the Dutch oven.

5. Stir the whole pot, and simmer on the stove for about 1 ½ hours.

6. Add the three cans of beans, and simmer for another 30 minutes.

7. Serve with dishes of chopped scallions, sour cream and shredded Cheddar cheese. Cornbread is great with this also!

Here's a favorite recipe for Wendy's chili that clones the dish served at the chain. Dave Thomas, Wendy's founder, has been serving this chili since 1969, the year the first Wendy's opened its doors. Over the years the recipe has changed a bit, but this version here is an amazing copy of the version of Wendy's chili served in the early 90's. Try topping this recipe with some chopped onion and cheddar cheese, as you can request in the restaurant.

Wendy's Chili Recipe

Ingredients:

2 pounds ground beef
One 29 ounce can tomato sauce
One 29 ounce can kidney beans, with liquid
One 29 ounce can pinto beans, with liquid
1 cup diced onion (1 medium onion)
½ cup diced green chili (2 chilies)
¼ cup diced celery (1 stalk)
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 Tablespoons chili powder
1 ½ teaspoons black pepper
2 teaspoons salt
2 cups water

Directions:

1. Brown the ground beef in a skillet over medium heat; drain off the fat.

2. Using a fork, crumble the cooked beef into pea-size pieces.

3. In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat.

4. Cook, stirring every 15 minutes, for 2 to 3 hours.

5. For spicier chili, add ½ teaspoon more black pepper. For much spicier chili, add 1 teaspoon black pepper and a tablespoon cayenne pepper. For super hot spicy, add 5 or 6 sliced jalapeño peppers to the pot.

Ingredients:

2 Tablespoons vegetable oil
2 pounds ground beef
2 medium onions, chopped
2 garlic cloves, finely chopped
28 ounces whole tomatoes
12 ounces beer
5 Tablespoons chili powder
2 jalapeño chili, seeded and chopped
1 Tablespoon cumin
2 teaspoons paprika
1 teaspoon sugar
cayenne pepper, optional
cheddar cheese, shredded
red onion, chopped
avocado, sliced

Directions:

1. Heat oil in 6 quart saucepan. Add ground beef, onions and garlic and sauté until meat is browned.

2. Stir in next 7 ingredients and bring to boil over medium-high heat.

3. Reduce heat to medium-low and simmer, uncovered, about 45 to 55 minutes.

4. Taste and season with salt, pepper and cayenne pepper, if desired. Ladle into bowls. Garnish with cheese, onion and avocado, if desired.

Ingredients:

2 Tablespoons salt pork, minced
2 pounds London broil, diced 1 inch
1 large yellow onion, minced
1 green bell pepper, sliced
1 Tablespoon minced garlic
1 Tablespoon jalapeño, seeded and minced
2-3 Tablespoons chili powder
1 Tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon red pepper flakes
1 bottle Dos Equis Amber (minus 1 sip)
¼ cup tequilla
1 28 ounce can diced tomatoes with juice
1 28 ounce can tomato purée
2 15 ounce cans dark red kidney beans, drained and rinsed

Directions:

1. Cook the salt pork until golden brown. Remove salt pork with slotted spoon and set aside.

2. Add diced meat to pan and quickly brown all sides, remove meat from pat and set aside.

3. In same pot add onions, peppers, garlic, and jalapeño and sauté until tender, adding oil if necessary.

4. Add chili powder, cumin, coriander and red pepper flakes, stir to mix.

5. Add beer and tequilla to pot with vegetables and spices and reduce liquid by half.

6. Add diced tomatoes and tomato purée to pan, bring to boil, reduce heat and add the cooked meat and simmer with a lid on for 1 hour, stirring occasionally.

7. Remove lid from pot, add beans, and simmer for an additional 30 to 60 minutes or until meat is tender.

8. Add browned salt pork and adjust seasonings.

1 teaspoon thyme
1 teaspoon allspice
1 teaspoon dried cilantro
1 large onion, finely chopped
2 stalks celery, finely chopped
1 can El Paso mild green chiles
3 jalapeño chiles, seeded and finely chopped
1 habanero chile, seeded and finely chopped
1 large garlic clove
2 15 ounce cans stewed tomatoes, pureed in a blender
1 12 ounce can beer
1 teaspoon beef base
3 teaspoons sweet paprika
1 teaspoon ground coriander
1 teaspoon cayenne pepper
1 shot Jim Beam bourbon whiskey
2 Tablespoons olive oil
3 Tablespoons masa harina

Directions:

1. Cook bacon and reserve grease for sauteing onions and garlic.

2. In a large chili pot, sauté onion and garlic. Remove onions and garlic and set aside.

3. Add olive oil and cook meat until gray in color, but not browned.

4. Add onion and garlic back to chili pot, and add dry spices. Cook while stirring for 3 to 4 minutes.

5. Add stewed tomatoes, bacon bits, chiles, beer, celery, whiskey, beef base.

6. Bring to a boil, and then simmer about 3 to 4 hours until done, adding masa harina 5-7 minutes before complete.

Directions:

1. In Dutch oven, brown ground meat, then drain. Add seasoning and water. Heat to boil.

2. Reduce heat, cover and simmer for 1 hour and 30 minutes. Skim off fat.

3. Stir in corn meal and simmer uncovered for 30 minutes. Stir occasionally.

Ingredients:

1 Tablespoon Wesson oil
3 pounds beef, cut into ¼ inch cubes
1 ½ cups white onion, finely minced
8 garlic cloves, finely minced
¾ teaspoon garlic powder
2 15 ½ ounce cans chicken broth, with fat removed
4 ounce (½ 8 ounce can) Hunt's tomato sauce
3 Tablespoons ground cumin
10 ½ Tablespoons Gebhardt chili powder, or 5 Tablespoons California Chile Powder (mild)
4 ½ Tablespoons New Mexico chile powder (medium)
1 Tablespoon New Mexico chile powder (hot)
2 teaspoons salt
½ teaspoon meat tenderizer
½ teaspoon light brown sugar
1 teaspoon Tabasco sauce

Directions:

1. In a large pot simmer onion and minced garlic in 2 cups of chicken broth for 10 minutes.

2. Add Hunt's tomato sauce and all dry spices, except the tenderizer and sugar. Mix well.

3. Brown the meat in Wesson oil using a separate pan and drain well. Sprinkle meat with tenderizer.

4. Add meat to the onion/spice mixture. Add remaining broth and simmer for 2 ½ hours.

5. Mix in brown sugar and Tabasco Brand Pepper Sauce just before serving.

Cincinnati Chili

Ingredients:

1 quart water
2 lb. ground chuck, crumbled
2 medium onions, finely chopped
5 to 6 cloves garlic, crushed
1 can (15 oz.) tomato sauce
2 Tablespoons cider vinegar
1 Tablespoon Worcestershire sauce
10 peppercorns, ground
8 whole allspice, ground
8 whole cloves, ground
1 large bay leaf
2 teaspoons salt
2 teaspoons ground cinnamon
1-1/2 teaspoons cayenne pepper
1 teaspoon. ground cumin
1/2 oz. unsweetened chocolate, grated

Directions:

1. Bring water to boil in a 4-6 quart pot. Add the ground chuck (do not brown first).

2. Stir until separated and reduce heat to simmer.

3. Add onions, garlic, tomato sauce, cider vinegar, and Worcestershire sauce. Stir to mix well.

4. Add peppercorns, allspice, cloves, bay leaf, salt, cinnamon, cayenne pepper and grated unsweetened chocolate.

5. Bring back to a boil, then reduce to simmer for 2½ hours cooking time in all.

6. Cool uncovered and refrigerate overnight.

7. Serve over al-dente spaghetti topped with oyster crackers, shredded cheese, onions, and kidney beans as desired.

1. Sauté beef in skillet. Put beef into your favorite chili pot and simmer with onions, garlic, and broth for one and a half hours. Keep your hands off and leave the lid on!

2. Add the Hunt's tomato sauce, diced tomatoes, kidney beans if you're using them, the Gebhardt chili powder and the ground cumin. Stir.

3. Fifteen minutes before eatin' time, take off the lid and enjoy the aroma of the greatest chili ever to slide into a melmac bowl!

4. Add the Tabasco. Put the lid back on and simmer for another 15 minutes. Add salt to taste.

5. Its now ready top serve. Give out the Pepto Bismol samples to all small children and women who wish to eat your chili.

6. Give your empty chili pot to the chili groupies and suggest they use new Dawn detergent to clean it up. (Its the Official Grease Cutter of the International Chili Society).

7. Comb your hair, straighten your hat and practice being modest before you receive applause OR the Championship Trophy if you are competing in a sanctioned ICS Cookoff.

Although some zealots in South Texas may argue that this isn't truly a recipe for chili because of the chicken and the beans, we find that elsewhere the response is that this white chili recipe tastes wonderful (and easy to make as a bonus).

Chili Ingredients:

1 Tablespoon olive oil
1 lb. boneless, skinless chicken - cubed
1/4 cup chopped onion
1 cup chicken broth
1 (4 oz) can chopped green chilies
1 (19 oz) can white beans (your choice of type)

Ingredients for Spice Blend:

1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon oregano leaves
1/2 teaspoon cilantro
1/4 teaspoon ground red pepper

Directions:

1. Heat oil in 2 qt saucepan over medium-high heat.

2. Add chicken and cook 4-5 minutes, stirring often.

3. Remove chicken with slotted spoon; cover and keep warm.

4. Add onion to saucepan and cook for 2 minutes. Stir in broth, green chilies, and spice blend; simmer 20 minutes.

5. Stir in cooked chicken and beans; simmer 10 minutes.

6. Top with Monterey Jack cheese and onions, serve over rice or over spaghetti for Cincinnati Style white chili.

Spicy_Chili_Con_Carne

Ingredients:

1 lb. pork
1 cup red chili sauce
1 Tablespoon flour
1/2 cup water
2 cloves garlic (large)
1/4 teaspoon oregano
1 teaspoon cumin
1/4 teaspoon coriander
1 teaspoon salt

Red Chili Sauce Ingredients:

12 pods red chili
2 cup water
1 teaspoon salt

Directions for Sauce:

1. Place chili pods and salt in water. Bring to a boil.

2. Reduce heat. Steam 15 minutes.

3. Place everything in blender when cooled slightly.

4. Blend and then strain through sieve.


Chili con Carne Directions:

1. Cut pork into bite sized cubes and fry.

2. Add flour, stirring constantly. Add Red Chili Sauce and water to make gravy.

3. Add garlic and spices; cook until pork is tender (add water if it begins to get dry). Serve in bowls garnished with jalapeno and cheese.

Ingredients:

3 lbs. ground beef
1 (15 ounce) can tomato sauce
1 cup water
1 teaspoon Tabasco sauce
3 Tablespoons chili powder
1 Tablespoon oregano
2 onions, coarsely chopped
1 teaspoon cumin
Garlic to taste, finely chopped
1 teaspoon salt
1 teaspoon cayenne pepper
1 teaspoon paprika
12 red peppers
4 or 5 chili pods
2 heaping teaspoons flour

Directions:

1. Sauté meat until browned.

2. Combine all ingredients except flour in a heavy pot. simmer 1 hour and 15 minutes.

3. Thicken chili with mixture of flour and a little water. Simmer another 30 minutes.

Ingredients:

2 ½ pounds sirloin cut into ⅜ inch cubes
2 Tablespoons vegetable oil
5 cloves garlic crushed into paste
1 ½ teaspoons seasoned salt
½ 8 ounce can Hunt's tomato sauce
½ 10 ½ ounce can beef broth
1 10 ½ ounce can chicken broth
8 Tablespoons Gebhardt's chili powder
1 teaspoon oregano
2 teaspoons cumin
2 teaspoons hot New Mexico chili powder, depending on heat desired
2 boiling onions, chopped
½ cup chopped yellow onions
⅛ teaspoon coriander powder
½ Tablespoon MSG * see note below as to why using this tiny amount makes a difference
1 teaspoon Tabasco sauce

Directions:

1. Brown meat 1 pound at a time in oil.

2. Drain and put in chili pot with chopped onions, beef broth, chicken broth, chili powder, oregano, cumin and chopped boiling onions.

3. Mix well and simmer for 2 hours then add crushed garlic, seasoned salt, tomato sauce, New Mexico chili powder, coriander and MSG.

4. Cook 20 minutes then add Tabasco sauce and use beef broth to thin. Salt to taste.

Do you have a rational reason for not using MSG? It's a naturally occurring chemical (Like sodium chloride) 
And formal studies have found no link to the 'Chinese restaurant syndrome' people complain about. 

In fact your own body produces about 40 grams of MSG a day---about the 1/2 the size of a Accent container. http://www.lakeconews.com... 

But if you're just worried about MSG. You can soak some dried mushrooms with some seaweed and use that for liquid...but I hate to break it too you; if you do that. You've just extracted MSG.
