Pumpkin Bars

Pumpkin Bar Recipe


Pumpkin bars are the perfect spiced treat that can be served individually with no mess. Easy to make, you can also frost them with cream cheese icing for an extra bit of decadence. Pumpkin bars should be refrigerated to keep them fresh, but make sure you get one fresh out of the oven for the ultimate taste experience!

Pumpkin Bars

Ingredients:


Bars:

4 eggs
1 2/3 cups sugar
1 cup vegetable oil
15-ounce can pumpkin
2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1 teaspoon salt
1 teaspoon baking soda


Cream Cheese Icing:

8-ounce package cream cheese, softened
1/2 cup butter or margarine, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract

 

Directions:

1. Preheat the oven to 350 degrees F.

2. Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy.

3. Stir together the flour, baking powder, cinnamon, salt and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.

4. Spread the batter into a greased 13 by 10-inch baking pan. Bake for 30 minutes. Let cool completely before frosting. Cut into bars.

5. To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on cooled pumpkin bars.

Chocolate Meringue Cookie Recipe

Chocolate Meringue Cookie Recipe


This meringue cookie recipe adds the flavor of chocolate to the delicate puff of a meringue cookie.

Chocolate Meringue Star Cookies

Ingredients

3 egg whites
1/2 teaspoon cream of tartar
2/3 cup sugar
2 tablespoons plus 1 teaspoon baking cocoa
1/3 cup (about) ground walnuts

 

Directions

1. Heat oven to 275 degrees F. Cover a cookie sheet with aluminum foil.

2. Beat cream of tartar and egg whites in medium bowl with electric mixer on medium speed until foamy. Slowly beat in sugar, in very small amounts, continue beating until stiff.

3.  Fold in cocoa, lightly combining.

4. Place meringue in a decorating bag fitted with a #4 large star tip. Pipe 1 1/4-inch stars onto cookie sheet. Sprinkle lightly with walnuts.

5. Bake 30-35 minutes or until outside is crisp and dry. Cool 5 minutes, then place on wire rack. Store in airtight container.

Mexican Wedding Cookie Recipe

This is the traditional Mexican Wedding cookie recipe, a wonderful treat served for a wonderful event. We serve them at Christmas, never realizing until a few years ago that these melt-in-your-mouth cookies were wedding cookies.

Mexican Wedding Cookies

Ingredients:

1 cup butter, at room temperature (2 sticks)
2 cups confectioners' sugar, divided
1-1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
2 cups sifted all-purpose flour
1/4 teaspoon salt
1 cup finely chopped pecans

 

Directions:

1. Preheat oven to 325 degrees F.

2. Using an electric mixer, cream together the butter and 1 cup of the confectioners' sugar in a large bowl. Stir in the vanilla and almond extracts.

3. Gradually add the flour and salt. Use the mixer for the first cup of flour, and then work in the remaining cup of flour and the finely chopped pecans by hand with a wooden spoon. Dough will be stiff.

4. Form dough into balls (1 level tablespoon each). Place on an ungreased baking sheet, 1 inch apart.

5. Bake at 325°F on middle oven rack until light golden brown, 15 to 20 minutes.

6. While cookies are still warm, place the remaining cup of confectioner's sugar in a shallow dish. Roll the cookies in sugar to coat completely. Makes about 3 dozen cookies.

Stained Glass Window Christmas Cookies

Ingredients:

1 cup sugar
3/4 cup butter, softened
1 teaspoon vanilla
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
4 rolls mult-colored lifesavers candy

 

Directions:

1. Beat sugar, vanilla, butter, and eggs in large bowl with electric mixer on medium speed, or mix with spoon.

2. Stir in baking powder, flour, and salt. Cover and refrigerate for one hour until firm.

3. Heat oven to 375 degrees F. Cover cookie sheet with aluminum foil.

4. On a lightly floured surface, roll 1/3 of dough at a time to 1/8 inch thickness. Cut into shapes.

5. Place 1 inch apart on cookie sheet. Cut out window pane designs from cookies. Place partially crushed pieces of candy in cutouts, mixing colors as desired.

6. Bake 7-9 minutes. Immediately spread any unmelted candy with a knife. Cool completely on pan.

Easy Cookie Recipe

Ingredients:

2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
Colored sugar sprinkles

 

Directions:

1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

2. In a mixer, cream together the butter, sugar, egg and vanilla until well blended. Slowly add the flour mixture, beating on medium speed until mixture is completely combined.

3. Roll rounded teaspoonfuls of dough into balls, sprinkle with colored sugar, then place onto ungreased cookie sheets.

4. Bake 7 to 9 minutes or until golden.

5. Let the cookies stand two minutes before removing them from the cookie sheets to cool on wire racks.

 Directions:

1. Combine butter, brown sugar and 2/3 cup granulated sugar and in a mixing bowl; beat until creamy.

2. Stir in egg, peanut butter, and vanilla, mix well. Stir in baking soda and flour, mix well.

3. Shape dough into 1-inch balls, then roll in 3 Tablespoons sugar, coating well.

4. Place 2 inches apart on ungreased baking sheets.

5. Bake in a 350 degree F oven for 10 to 12 minutes. Remove from baking sheets and cool on wire racks.

1 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs

 

Directions:

1. Preheat oven to 375 degrees F.

2. Melt 2 cups of the chocolate chips in a small, heavy-duty saucepan over low heat; stir until smooth. Remove from heat.

3. Combine flour, baking soda and salt in medium bowl.

4. Beat butter, brown sugar, granulated sugar and vanilla extract in large mixer bowl.

5. Add eggs, one at a time, beating well after each addition.

6. Beat in melted chocolate.

7. Gradually beat in flour mixture.

8. Stir in remaining 2 cups of chocolate chips.

9. Drop by rounded tablespoon onto ungreased baking sheets.

Directions:

1. Heat oven to 375 degrees F.

2. Beat butter, vanilla, sugars, and eggs in large bowl with electric mixer on medium speed. Stir in flour, salt, and baking soda. A stiff dough will form.

3. Stir in chocolate chips, and if using nuts add also.

4. Drop dough by rounded tablespoons onto ungreased cookie sheet 2 inches apart.

5. Bake about 10 to 12 minutes. Cool 1 to 2 minutes then finish cooling on wire rack.

Ingredients:

1 (7 ounce) package almond paste
1/4 cup all-purpose flour
1 1/4 cups powdered sugar
1/4 teaspoon almond extract
2 egg whites
3 dozen blanched whole almonds

 

Directions:

1. Grease cookie sheet. Crumble almond paste into small pieces in large bowl.

2. Stir in almond extract, flour, and powdered sugar. Add egg whites. Beat with electric mixer on medium speed about 2 minutes,
until smooth.

3. Place dough by small spoonfuls onto cookie sheet, 2 inches apart. Place an almond on top of each cookie, then refrigerate 30 minutes.

4. Heat oven to 325 degrees F. Bake about 12 minutes.

5. Immediately remove from cookie sheet to wire rack. Cool completely. Store in airtight container.

Coconut Cookies

Ingredients:

1/2 cup coconut oil
1 cup + 1 Tablespoon brown sugar, packed
2 large eggs
1 Tablespoon pure vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 cups butterscotch chips
1 cup shredded coconut, toasted

 

Directions:

1. Preheat oven to 375 degrees F and prepare a baking sheet with cooking spray.

2. In a large mixing bowl, use a mixer to beat coconut oil and brown sugar.

3. Add the eggs and beat until fluffy. Add vanilla extract.

4. In a separate medium bowl, combine flour, baking powder, baking soda, and salt with a whisk.

5. Mix the flour mixture into the coconut oil mixture a little bit at a time with a wooden spoon until flour is well mixed.

6. Add in the butterscotch chips and coconut and mix well.

1. Heat oven to 350 degrees F. Grease rectangular pan, 13 × 9 × 2 inches.

2. Mix banana, sugar, oil and eggs in large bowl with spoon. Stir in flour, baking soda, baking powder, cinnamon and salt. Stir in nuts.

3. Spread batter in pan. Bake 25 to 30 minutes.

4. Cool completely. Frost with Cream Cheese Frosting. Cut into bars.

Ingredients:

2 cups sugar
2 cups vegetable shortening
2 eggs
1 (15 ounce) can pumpkin
2 teaspoons vanilla extract
1 cup raisins
1/2 cup chopped nuts (to place on top of frosting)


Cream Cheese Frosting Ingredients:

1 (3 ounce) package cream cheese, softened
1/3 cup butter or margarine, softened
1 teaspoon vanilla
2 cups powdered sugar

 

Directions:

1. Preheat oven to 350 degrees F.

2. Combine flour, baking powder, baking soda, salt, cinnamon, ginger and cloves in medium bowl. Beat shortening and granulated sugar in large mixer bowl for 30 seconds.

3. Add pumpkin, eggs and 2 teaspoons vanilla extract; beat until blended. Gradually add flour mixture into pumpkin mixture at low speed until combined.

4. Stir in raisins. Drop by rounded teaspoons onto ungreased baking sheets.

5. Bake for 12 to 15 minutes or until edges are golden brown. Cool on baking sheets for 2 minutes; remove to wire rack to cool completely.

6. Mix all frosting ingredients together with an electric mixer until smooth.

7. Frost cookies with Cream Cheese Frosting. Sprinkle nuts on top.

This is an old fashioned molasses cookie recipe. You must use dark molasses, the flavor is unbeatable!

Molasses Cookies

Ingredients:

1 cup sugar
1/2 cup shortening
1 cup dark molasses
1/2 cup water
4 cups all-purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons ground ginger
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
raisins to mix in the dough (optional)
Sugar to sprinkle on top

 

Directions:

1. Beat sugar and shortening in large bowl with electric mixer on medium speed. Stir in remaining ingredients.

2. Cover and chill at least 3 hours until dough is firm.

3. Preheat oven to 375 degrees F.

4. Roll dough 1/4 inch thick on floured surface. Cut into 3-inch circles, then sprinkle with sugar.

5. Place on greased cookie sheet, about 2 inches apart. Bake 10 to 12 minutes.

6. Cool 2 minutes then remove from cookie sheet to wire rack.

Gingerbread Cookie Recipe

Gingerbread Man Cookie Recipe


Nothing says home like a good gingerbread cookie recipe filling the air with the wonderful spices that smell like the holidays.

This recipe makes a firm dough for rolling, but don't be afraid to generously flour your rolling surface and rolling pin. Inexpensive pastry cloths and rolling pin covers work fabulously for cut-out cookies.

We've had tremendous success with them even with dough that used to stick to everything in previous attempts. You can buy the cloth and cover at most discount stores or Amazon.com.

Gingerbread Men

Ingredients:

3 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 Tablespoon ground ginger
1 3/4 teaspoons ground cinnamon
1/4 teaspoon ground cloves
6 Tablespoons unsalted butter
3/4 cup dark brown sugar
1 large egg
1/2 cup molasses
2 teaspoons vanilla extract

 

Makes 24 Cookies

Directions:

1. In a small bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until well blended.

2. In a large mixer bowl beat butter, brown sugar, and egg on medium speed until well blended.

3. Add the molasses and vanilla. Continue to mix until well blended.

4. Gradually stir in dry ingredients until dough is smooth.

5. Divide dough in half and wrap each half in plastic. Let stand at room temperature for at least 2 hours.

6. Preheat oven to 375 degrees F. Line cookie sheets with parchment paper.

7. Place 1 half of the divided dough on a floured surface.

8. Roll dough to a little over 1/4" thickness. Flour your work surface and rolling pin as needed to keep the dough from sticking.

9. Cut out cookies with cookie cutters.

10. Place cookies 1 1/2" apart on prepared cookie sheet.

11. Bake one sheet of cookies at a time for 7-9 minutes, do not overbake. Cookies firm up after cooling.

12. Remove cookie sheet from oven and allow the cookies to cool until firm enough to move to a wire rack. Decorate your gingerbread men with icing, candies, or colored sugar when fully cooled.

Thin Mint Girl Scout Cookie Recipe

Ingredients:

8 ounces butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup cocoa powder
3/4 teaspoon salt
1 1/2 cups flour


Chocolate Peppermint Coating Ingredients:

1 pound semi-sweet chocolate, chopped
1/4 teaspoon plus a couple drops of natural peppermint extract

 

Directions:

1. Preheat oven to 350 degrees F.

2. Cream the butter and powdered sugar until light and fluffy. Stir in the vanilla extract, salt and cocoa powder. Mix well.

3. Add the flour and mix well, but do not overmix.

4. Turn the dough out onto a counter, form a smooth ball.

5. Place the ball of dough into a large plastic bag and flatten to 3/4-inch thick. Place in the freezer for 20 minutes to chill.

6. Rollout dough out thin, about 1/8-inch. Cut out circles with a cookie cutter.

7. Place cookies on a parchment-lined baking sheet and bake for 10 minutes. Allow cookies to cool completely.

 

Peppermint Coating Directions:

1. Slowly melt the chocolate, stirring occasionally until smooth. Stir in the peppermint extract.

2. Dip each cookie into the chocolate until fully coated with a thin even coating of chocolate, drain excess chocolate when removing cookie from chocolate.

3. Place on the parchment lined baking sheet, and repeat for the rest of the cookies. Place the cookies in the refrigerator to set.

Oreo Cookie Recipe

Homemade Oreo Cookie Recipe


This oreo cookie recipe was passed around friends for a long time, it's a great way to show kids how oreo cookies are made.

Home Made Oreo Cookies

Ingredients:

2 (18 ounce) boxes devil's food cake mix
4 eggs, beaten well 
2/3 cup oil 
1/2 cup butter 
4 ounces cream cheese 
2 cups powdered sugar 
1/2 teaspoon vanilla 

 

Directions:

1. Mix eggs, cake mix, and oil together well.

2. Shape into gumball sizes balls.

3. Bake at 350 degrees F for 10 minutes.


Inside Cream Filling:

1. Mix butter, cream cheese, powdered sugar and vanilla together.

2. When cookies are completely cool frost the flat side of one cookie, place another cookie on top of the frosting (flat side to flat side).

1. Preheat oven to 375 degrees F.

2. Beat water and eggs in mixing bowl until light and fluffy. Add in Splenda and cinnamon.

3. Combine baking soda,  flour,  and salt in sifter. Sift half over egg mixture. Fold to completely blend, then repeat.

2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts
1 (12 ounce) package semisweet chocolate chips (2 cups)

 

Directions:

1. Heat oven to 375 degrees F.

2. Beat brown sugar, white sugar and butter in large bowl with electric mixer on medium speed about 3 minutes or until fluffy.

3. Beat in eggs and vanilla, then stir in the baking soda, salt and flour. Add the walnuts and chocolate.

4. Drop dough by large scoops onto ungreased cookie sheet, 2 inches apart. Flatten slightly with fork.

5. Bake 11 to 14 minutes. Cool on pan for five minutes, then cool on wire racks.

Low Fat Vanilla Butter Cookies

Ingredients:

1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 cup butter, softened
2/3 cup sugar
1 egg white
1 teaspoon vanilla

 

Directions:

1. Combine flour, baking soda and salt in a small bowl.

2. In a large bowl, beat sugar and butter with an electric mixer until well blended. Add egg white and vanilla, mix well.

3. Gradually stir in flour mixture. Form dough into a  ball, place on wax paper and form into a 6-inch log. Wrap the dough and freeze for 3 hours.

4. Preheat oven to 350 degrees F. Cover the bottom of a cookie sheet with parchment paper. Slice cookie dough into 1/4-inch rounds.  Place 1 inch apart on cookie sheet.

5. Bake for 8-10 minutes.

Ingredients:

1 cup butter, softened
1 cup packed brown sugar
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
2 1/2 cups rolled oats, finely ground (run through a blender until fine)
1/2 teaspoon salt
1 teaspoons baking powder
1 teaspoons baking soda
12 ounce bag semisweet chocolate chips
4 ounces finely grated chocolate bar
1 cup chopped walnuts

 


Directions:

1. Cream the butter, brown sugar, and white sugar until well blended.

2. Add the teaspoon of vanilla and 2 eggs to the mixture. Mix well.

2. In a separate large bowl, mix together the flour and the finely ground oatmeal.

3. To the flour and oatmeal, add the salt, baking powder and baking soda.

4. Combine the butter-sugar mixture with the flour mixture.

5. Add the 12 ounce bag chocolate chips, the grated chocolate bar and chopped walnuts.

4. Make large ball shapes from the dough, place on cookie sheets 2 inches apart.

5. Bake at 350 degrees F for 8-9 minutes.

Ingredients:

1 teaspoon vanilla extract
2 eggs
2 cups (12-ounce package) NESTLE TOLL HOUSE Semi-Sweet Chocolate Morsels
1 cup chopped nuts

 

Directions:

1. Combine flour, baking soda and salt in small bowl.

2. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture.

3. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.

4. Bake in preheated 375 degree F oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.

Ingredients:

1 1/2 cups graham cracker crumbs

1 cup (6 ounces) semi-sweet chocolate chips
1 1/3 cups flaked coconut

Directions:

1. Preheat oven to 350 degrees F (325 degrees F for glass baking pan). Line a 13x9-inch baking pan (including sides) with a sheet of aluminum foil. Coat foil lightly with no-stick cooking spray.

2. In small bowl, combine graham cracker crumbs and butter; mix well. Press crumb mixture firmly on bottom of 13x9-inch baking pan.

3. Layer chips, coconut and nuts evenly over crust.

4. Pour condensed milk evenly over top of everything.

5. Bake 25 minutes or until lightly browned. Cool.

6. Lift up edges of foil to remove from pan. Cut into individual squares. Lift off of foil.
