Peanut Butter Cookies

Ingredients:

  • 3/4 cup (1 1/2 sticks) butter, softened
  • 2/3 cup firmly packed brown sugar
  • 2/3 cup, plus 3 tablespoons granulated sugar, divided
  • 1 egg
  • 2/3 cup peanut butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 2/3 cup all-purpose flour

 Directions:

1. Preheat your oven to 350 degrees Fahrenheit.

2. Combine butter, brown sugar, and 2/3 cup granulated sugar in a large mixing bowl, and beat until creamy.

2. In the same bowl, gradually beat in egg, peanut butter, and vanilla thoroughly. Stir in baking soda and flour, and mix well.

3. Shape dough into 1-inch balls, then roll in 3 3ablespoons of sugar, coating well.

4. Place 2 inches apart on ungreased baking sheets.

5. Bake for 10 to 12 minutes or until set. Remove from baking sheets and cool on wire racks.
