You’re Going to Love This Barley-Pine Nut Casserole Recipe

Every family has a set of casserole recipes that they love to use. Whether it's a classic like green bean casserole or something unique to your family, casseroles are often a big chunk of a family recipe book. This is one of the most unique casserole recipes out there, featuring barley and pine nuts center stage.

This recipe is packed to the brim with lots of nutrition. In this fast-paced day and age, it can be hard to get all of the vitamins and minerals you need. With recipes like this, that task is a lot easier. You can serve this dish to your family and feel good about it.

Since we use a slow cooker to make this recipe, it's extra easy. Simply combine most of the ingredients in your slow cooker, set it to low, and cook for six to eight hours. It may take a little longer for some slow cookers to get the barley tender, but in most cases this time range should be accurate.

Once your dish is cooked, stir in the final ingredients and serve! Your family will quickly grow to appreciate all that barley and pine nuts have to offer. Add this recipe to your family's collection of casserole recipes, and pass it down to the next generation!
