Corned beef is a great choice for a dinner this week. It sometimes goes under the radar, especially when we're thinking about crock pot recipes. Pot roasts are commonly chosen for crock pot beef recipes, and for good reason. Still, corned beef deserves some love.

This corned beef and cabbage dinner will be a delight. Since it's made with the crock pot, it's an exceptionally easy recipe. You already have enough on your plate without having to worry about complicated recipes. Getting dinner on the table shouldn't be a huge undertaking.

Of course, we can't have a beef crock pot recipe without some potatoes and carrots. It seems nearly impossible to make a good beef crock pot recipe without them! They just work so well with beef, and wind up nice and tender in the crock pot.

Speaking of tender, you won't have to worry about your beef being too tough. The crock pot will take that concern and throw it right out the window. One of a crock pot's abilities is to cook meat low and slow, allowing it to tenderize properly and evenly.

Crock Pot Corned Beef and Cabbage

Ingredients:

12 new red potatoes, quartered
4 carrots, sliced
4 pounds corned beef brisket
2 onions, sliced
3 whole bay leaves
8 black peppercorns
1 head cabbage, cut into wedges

Directions:

1. Place potatoes and carrots in bottom of the crock pot.

2. Add brisket, onions, bay leaves, and peppercorns. Add enough water to cover the brisket.

3. Cover; cook on low 4 to 5 hours.

4. Add cabbage. Continue cooking on low 4 to 5 hours longer. Remove brisket to a serving platter.

5. Slice brisket against the grain, and serve with the potatoes, carrots, onions, and cabbage.
