You Need to Try This Spicy Chicken Chili Verde Recipe

If there's one thing every family should have, it's a slow cooker. On top of that, every family needs a good set of slow cooker recipes. This recipe for spicy chicken chili verde is one to add to your family's recipe book, to have again and again when you want.

You won't need anything too special for this recipe. Salsa verde, corn, cumin, hot sauce, and cannellini beans are important ingredients you'll need to buy. In terms of spice, we consider this recipe to be fairly spicy. Of course, everyone's heat tolerance varies; you may feel that this recipe is mild, or that it's extra spicy.

You'll need to do some cooking in the skillet before adding the ingredients to the slow cooker, so make sure to set aside enough time to do that. This recipe will need to cook for ten hours on low. It's one of the lengthiest cook times you'll see for a crock pot recipe, but every hour is absolutely necessary.

This recipe can definitely be cooked while you're away at work. You'll need to get up a bit earlier to get everything ready in time, but the extra effort will absolutely be worth it. Alternatively, cook this dish on a weekend while you're off on a day trip with your family.

Spicy Chicken Chili Verde

Ingredients:

1 pound skinned and boned chicken thighs, cut into 1-inch pieces
1 tablespoon vegetable oil
1 medium onion, chopped
3 garlic cloves, minced
2 cups chicken broth
1 cup salsa verde
1 cup frozen whole kernel corn
1 teaspoon ground cumin
1 teaspoon hot sauce
½ teaspoon pepper
1 (15½ ounce) can cannellini beans, rinsed and drained

Directions:

1. Cook chicken in hot oil in a medium skillet over medium-high heat for 4 minutes or until browned, stirring often. Transfer chicken to a 4-quart slow cooker.

2. Add onion and garlic to drippings in skillet; sauté until vegetables are tender. Add broth, stirring to loosen particles from bottom of skillet. Add broth mixture to chicken in slow cooker.

3. Stir in salsa and next 4 ingredients. Cover and cook on low 10 hours.

4. Add beans. Mash beans in soup with a potato masher or back of spoon until desired consistency.
