Ingredients:
2 8-ounce grouper or other white fish steaks (1 inch thick)
2 teaspoons low-sodium soy sauce
½ teaspoon peeled, finely grated gingerroot
2 teaspoons dark sesame oil
2 cups fresh snow pea pods, trimmed (about ½ pound)
1 ½ cups thinly sliced fresh mushrooms
4 green onions, sliced into ½-inch pieces
1 teaspoon sesame seeds, toasted
Directions:
1. Cut each steak into 2 equal portions, and arrange in an 8 inch square baking dish. Top with soy sauce and gingerroot. Cover and bake at 425 degrees F for 25 minutes or until fish flakes easily when tested with a fork.
2. Heat oil in a nonstick skillet over medium-high heat. Add snow peas, mushrooms, and green onions; sauté 5 minutes or until crisp tender.
3. Sprinkle with sesame seeds. Serve snow pea mixture with fish.
