Ingredients:
6 4-ounce farm-raised catfish fillets
Vegetable cooking spray
2 tablespoons reduced-calorie margarine, melted
1 tablespoon lemon juice
¼ teaspoon ground ginger
¼ teaspoon curry powder
¼ teaspoon dried crushed red pepper
Tricolor Pepper Relish
Directions:
1. Place catfish fillets on rack of a broiler pan coated with cooking spray.
2. Combine margarine and next 4 ingredients; stir well. Brush fillets with margarine mixture.
3. Bake at 400 degrees F for 25 to 30 minutes or until fish flakes easily when tested with a fork. Transfer fillets to a serving platter. Top each serving with ¼ cup Tricolor Pepper Relish.
Baked Catfish Tricolor Pepper Relish
Ingredients:
½ cup pineapple tidbits in juice, drained
½ cup chopped sweet red pepper
1/3 cup chopped green pepper
1/3 cup chopped sweet yellow or orange pepper
1 tablespoon cider vinegar
1 tablespoon unsweetened pineapple juice
1 packet sugar substitute with aspartame
1 teaspoon peeled, minced gingerroot
1/8 to ¼ teaspoon dried crushed red pepper
Directions:
1. Combine all ingredients in a small bowl; stir well. Cover and chill at least 30 minutes.
