Banana-Oat Bran Pancakes
Yield: 12 4-inch pancakes

2/3 cup unprocessed oat bran
2/3 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons granulated sugar substitute (such as Sugar Twin)
1 8-ounce carton plain nonfat yogurt
1/3 cup mashed ripe banana
1 tablespoon vegetable oil
2 teaspoons vanilla extract
3 egg whites
Vegetable cooking spray
1. Combine first 5 ingredients in a medium bowl; make a well in center of mixture.
2. Combine yogurt and next 3 ingredients; add to dry ingredients, stirring until moistened.
3. Beat egg whites in a medium bowl at high speed of an electric mixer until stiff peaks form; gently fold into batter.
4. For each pancake, pour ¼ cup batter onto a hot griddle or skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked.
