Ingredients:
2 cups all-purpose flour
1 tablespoon plus 1 teaspoon baking powder
2 teaspoons granulated sugar substitute (such as Sugar Twin)
¼ teaspoon salt
1 ½ cups skim milk
½ cup frozen egg substitute, thawed
¼ cup reduced-calorie margarine, melted
½ teaspoon vanilla extract
Vegetable cooking spray
Fresh blueberries (optional)
Fresh mint sprigs (optional)
Directions:
1. Combine first 4 ingredients in a medium bowl. Combine milk, egg substitute, margarine, and vanilla; add to dry ingredients, beating well at medium speed of an electric mixture.
2. Coat a Belgian waffle iron with cooking spray; allow waffle iron to preheat.
3. For each waffle, spoon ¼ cup batter onto hot waffle iron, spreading batter to edges. Bake 4 to 5 minutes or until steaming stops. Repeat procedure with remaining batter. If desired, serve with fresh blueberries, and garnish with mint sprigs.
