Low Calorie Biscuits
Yield: 6 biscuits
Exchanges per biscuit:
1 cup all-purpose flour
1 ½ teaspoons baking powder
1/8 teaspoon baking soda
¼ teaspoon salt
2 tablespoons reduced-calorie stick margarine
½ cup plain low-fat yogurt
½ teaspoon honey
No-sugar-added fruit spread (optional)
1. Combine first 4 ingredients in a medium bowl; cut in margarine with pastry blender until mixture is crumbly. Add yogurt and honey, stirring just until dry ingredients are moistened.
2. Turn biscuit dough out onto lightly floured surface, and knead lightly 4 to 5 times.
3. Roll dough to ½-inch thickness; cut into rounds with a 2 ½-inch biscuit cutter. Transfer dough rounds to an ungreased baking sheet. Bake at 425 degrees F for 10 to 12 minutes or until golden. Serve with fruit spread, if desired (fruit spread not included in analysis).
