Pimento Cheese Dip
Yield: 1 ¼ cups
Exchanges per tablespoon: Free (up to 3 tablespoons)
¾ cup 1% low-fat cottage cheese
3 tablespoons reduced-fat mayonnaise
½ teaspoon vinegar
1/8 teaspoon pepper
Dash of hot sauce
¼ cup (1 ounce) shredded reduced-fat sharp Cheddar cheese
1 2-ounce jar diced pimiento, drained
1. Combine first 5 ingredients in container of an electric blender or food processor; cover and process until smooth. Cover and chill.
2. Stir in cheese and pimiento.
3. Serve with vegetable crudités (not included in analysis).
