Ingredients:
Vegetable cooking spray
1/3 pound freshly ground raw turkey breakfast sausage
¼ cup chopped green pepper
¼ cup chopped green onion
1 cup all-purpose flour
¼ cup cornmeal
1 teaspoon baking soda
¼ teaspoon salt
1/8 teaspoon ground red pepper
1 cup nonfat buttermilk
2 teaspoons margarine, melted
1 egg, lightly beaten
1/3 cup (1.3 ounces) shredded reduced-fat sharp Cheddar cheese
Directions:
1. Coat a nonstick skillet with cooking spray. Place over medium heat until hot. Add sausage, green pepper, and onions. Cook until sausage browns, stirring until it crumbles; drain.
2. Combine flour and next 4 ingredients in a bowl; make a well in center of mixture. Combine buttermilk, margarine, and egg; add to dry ingredients, stirring just until dry ingredients are moistened. Gently fold in sausage mixture and cheese.
3. Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Bake at 400 degrees F for 20 minutes or until golden. Remove muffins from pans immediately.
