Snappy Spinach Dip Recipe
Yield: 2 cups

1 10-ounce package frozen chopped spinach, thawed and drained
1 cup 1% low-fat cottage cheese
¼ cup low-fat sour cream
2 tablespoons reduced-fat mayonnaise
2 tablespoon minced fresh parsley
2 teaspoons extra spicy salt-free herb and spice blend
2 teaspoons lemon juice
¼ teaspoon garlic powder
Celery leaves (optional)
1. Press spinach between layers of paper towels to remove excess moisture.
2. Position knife blade in food processor bowl; add cottage cheese and sour cream. Process until smooth, stopping once to scrape down sides.
3. Add spinach, mayonnaise, and next 4 ingredients; process until smooth.
4. Transfer dip to a bowl. Serve with assorted fresh vegetables (vegetables not included in analysis). Garish with celery leaves, if desired.
