Country Fried Steak Recipe
Also known as Chicken Fried Steak, this country fried steak recipe is a traditional down-home favorite. Reportedly this recipe originated when German immigrants settled in Texas and adapted their Wiener Schnitzel (tenderized, breaded veal cutlets) to the readily available round steaks, this food has made it to many menus and dinner tables throughout the south, Midwest and southwestern part of the country.
Usually served with a vegetable and mashed potatoes, then loaded with gravy, its not difficult to see why so many families are fond of this dish.
Ingredients:
1 cup all-purpose flour
2 teaspoons salt
1 teaspoon granulated garlic
1 teaspoon ground black pepper
1 teaspoon onion powder
2 (5 ounce) Black Angus top round steaks
Buttermilk
4 ounces whole butter
Country Gravy (recipe follows)
Directions:
1. Mix flour, salt, garlic, pepper and onion powder together to make seasoned flour mixture.
2. Tenderize steaks by running through a meat tenderizer or beating with a hand meat tenderizer.
3. Soak in buttermilk briefly and then dip in seasoned flour mixture.
4. Heat butter in sauté pan on medium high heat. Place breaded steaks in pan and cook until golden brown and tender, approximately 10 minutes per side.
Serve with Country Gravy (recipe below).
Country Gravy
Ingredients:
2 Tablespoons of bacon grease
2 Tablespoons of flour
1 1/2 cups of milk
1 teaspoon black pepper
Salt to taste.
Directions:
1. Combine fat with flour in a hot skillet, continuously stirring, cook on medium for a couple of minutes until a dark roux is formed.
2. Add milk slowly to skillet, and mix with roux using either a whisk or wooden spoon.
3. Turn heat to low and continue stirring until mixture is thickened, a couple more minutes.
4.Add pepper and salt to taste. If gravy is too thick for your taste, you can thin it by adding either more milk or water a tablespoon at a time.
