Southern Fried Catfish Recipe

Catfish used to be known as the black sheep of the fish family. Forever being judged for it's bottom feeding habits, this tasty fish was often passed over when it came to recipes. With catfish farms changing all that, recipes like Southern Fried Catfish have become mainstream. This moist, tender fish is dredged in a spiced cornmeal breading for a finger licking good family meal.

Ingredients:

3/4 cup yellow cornmeal
1/4 cup all-purpose flour
2 teaspoons salt
1 teaspoon ground red pepper
1/4 teaspoon garlic powder, to taste
6 (4 ounce)  farm-raised catfish fillets
1/4 teaspoon salt
vegetable oil


Directions:

1. Combine first 5 ingredients in a large shallow dish.

2. Sprinkle fish with 1/4 teaspoon salt then dredge in cornmeal mixture, coating evenly.

3. Pour oil to a depth of 1 1/2 inches into a deep cast-iron skillet, heat to 350 degrees.

4. Fry fish, in batches, 5 to 6 minutes or until golden. Drain on paper towels. Serves 6.
