Cranberry Salsa


12 ounces fresh cranberries
1 bunch fresh cilantro, chopped finely
¾ cup minced green onions
1 jalapeno pepper
½ cup green bell pepper, minced
1 lime, juiced
1 teaspoon ground cumin
¾ cup white sugar
Salt to taste


1. Seed and mince jalapeno pepper. Set aside.

2. Rinse and drain cranberries, picking over and discarding any that are discolored, soft or bruised.

3. In food processor combine cranberries, cilantro, green onions, jalapeno, pepper, lime juice, cumin, and salt. Chop to medium consistency or until all ingredients are minced and combined.

4. Refrigerate in airtight container 4 hours or overnight.
