Try This Unique Melon Soup Recipe

Since this recipe doesn't require any cooking, it's quick to make. It's perfect for a lunch or quick dinner. It can even be prepared the night before and enjoyed for breakfast. Since this recipe is so healthy, it can be a great choice for someone who's sick. Steer clear of high-sodium canned soups and make this instead.

Cold Melon Soup

Ingredients:

1 cup orange juice
3 tablespoons lime juice
1 1/2 tablespoons honey
1 1/2 cups cantaloupe (peeled, seeded, and chopped)
1 1/2 cups honeydew melon (peeled, seeded and chopped)
1 cup apple cider 

Directions:

1. Puree orange juice, lime juice, honey, half the cantaloupe and half the honeydew in a food processor or blender.

2. Transfer mixture to a large bowl. Finely chop remaining melon.

3. Stir melon into puree. Stir in apple cider. Keep cold until read to serve.
