Tortilla chips don't have to just be for Mexican night! With this fantastic tortilla-crusted chicken recipe, you can make use of your tortilla chips in an all-new way. There are countless chicken recipes out there, but not all of them are worth trying. This one certainly is.

In addition to the tortilla chips and chicken, you'll need some nonstick cooking spray, dried oregano, ground cumin, black pepper, an egg, and, optionally, salsa. All of these ingredients are easy to come by for the average cook. In fact, you probably already have most of them on hand!

Tortilla-Crusted Chicken

Ingredients:

Nonstick cooking spray
1 cup finely crushed tortilla chips
½ teaspoon dried oregano, crushed
¼ teaspoon ground cumin
¼ teaspoon black pepper
1 egg
4 skinless, boneless chicken breast halves (1 pound)
Salsa (optional)

Directions:

1. Coat a 15x10x1-inch baking pan with nonstick cooking spray; set aside. In a shallow dish combine tortilla chips, oregano, cumin, and pepper. Place the egg in another shallow dish; beat slightly. Dip chicken in beaten egg and coat with tortilla chip mixture.

2. Arrange chicken in prepared baking pan. Bake in a 375° oven about 25 minutes or until chicken is no longer pink (170°F). If desired, serve the chicken with salsa.
