You’re Going to Love This Healthy Beef Casserole Recipe

The thought of eating beef while on a diet might seem blasphemous to you. You may have heard that beef is bad for people who are trying to lose weight, or who are trying to be heart healthy. Healthy Beef Casserole Recipe

Ingredients:

½ pound lean ground beef
1 cup onion, chopped
1 cup celery, chopped
1 cup green pepper, cubed
2 (14 ounce) cans no-salt-added diced tomatoes
¼ teaspoon salt
½ teaspoon black pepper
¼ teaspoon paprika
1 cup frozen peas
2 small carrots, diced
1 cup uncooked rice
1½ cups water

Directions:

1. In skillet, brown ground beef and drain off fat.

2. Add rest of ingredients. Mix well. Cover and cook over medium heat until boiling. Reduce to low heat and simmer for 35 minutes or until rice is done. Serve hot.
