You’ll Love This Skillet Garlic Meatball Dinner Recipe

Meatballs don't have to just be a side for pasta! When included in a recipe like this one, they can stand all on their own! This garlic meatball dinner incorporates green beans for added nutrition. This is a fantastic way to get even the pickiest of eaters to eat their vegetables!

The seasonings we use in this recipe make it truly burst with flavor. Nothing is worse than a dinner that is under-seasoned and bland. You won't have to worry about that with this recipe! The ingredients list may look long at first, but you likely already have several of the ingredients on hand.

Make sure to take note that this recipe uses lean ground beef. 80/20 beef isn't good for this recipe! Lean ground beef has its benefits, including being lower in calories than fattier cuts of ground beef. Aim to get at least 93/7 ground beef, or something at least in that region.

To make this recipe as healthy as possible, get the leanest ground beef you can find. This may be 93/7 beef for your store, or you may be able to find leaner. Generally, it's quite difficult to find ground beef that is leaner than 94/6 without going to a butcher.

Skillet Garlic Meatball Dinner

Ingredients:

1 pound lean ground beef
1 large egg
¼ cup seasoned dry bread crumbs
3 Tablespoons grated Parmesan cheese
¼ teaspoon salt
¼ teaspoon black pepper
1 (10 ounce) package frozen cut green beans, thawed
1 (15 ounce) can small white potatoes, drained and quartered
1 (14½ ounce) can stewed tomatoes
4 garlic cloves, minced

 

Directions:

1. In a medium bowl mix the beef, egg, bread crumbs, cheese, salt, and pepper.

2. Form the mixture into 16 meatballs.

3. In a large, deep nonstick skillet, brown the meatballs over medium-high heat, turning occasionally, for 3 minutes.

4. Add the green beans, potatoes, tomatoes, and garlic.

5. Bring to a boil over medium-high heat. Reduce the heat to medium-low, cover, and simmer for 8 minutes, stirring occasionally until the green beans are tender and the meatballs are cooked through. Serves 4.
