Create Your Own Refreshing and Easy Mint Chocolate Cheesecake

Also known as the Girl Scout Thin Mint Cheesecake, this mix of chocolate with mint makes a rich, refreshing cheesecake recipe. If you're a fan of the chocolate and mint combination, you've got to try this recipe. This Mint Chocolate Chip Cheesecake recipe is easy to do and doesn't require many ingredients that you don't already have on hand.

Mint Chocolate Chip Cheesecake Ingredients

  • 1 and 1/2 cups of finely crushed Oreos
  • 3 Tablespoons butter, melted
  • 24oz packages cream cheese, softened
  • 14oz condensed milk, not evaporated
  • 3 eggs
  • 3/4 teaspoon peppermint extract
  • 1 cup of semi-sweet chocolate chips
  • 1 teaspoon flour
  • 1/4 teaspoon green food coloring, optional

Mint Chocolate Chip Cheesecake Directions

1. Preheat oven to 300 degrees Fahrenheit.

2. Combine cookie crumbs and butter, then press firmly on the bottom of a 9-inch springform pan.

3. In a large mixing bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth.

4. Add eggs, peppermint, and food coloring and mix well.

5. In a small bowl, toss 1/2 chocolate chips with flour to coat and stir into cheese mixture. Pour into a prepared pan.

6. Sprinkle remaining 1/2 cup of chocolate chips evenly over the top. Bake for 1 hour or until cake springs back when lightly touched.

7. Cool to room temperature and chill for about 4 hours.
