A grouper is a fish that belongs to the Serranidae family which also includes sea bass. It is lean and moist, and it has a distinctive yet mild flavor. It has large flakes and a firm texture.

Groupers can be red or black. The Red Grouper has a flavor that is sweeter and milder than that of the black, but the black is considered to be tastier.

In general, as far as taste goes, grouper can be compared to bass and halibut. It is easy to cook as it tends not to dry out easily.

Greek Grouper Recipe

There are many ways to prepare grouper but, for this recipe, we are taking a Greek approach. The Mediterranean flavor is provided by the Greek seasoning and the crumbled feta cheese. Tomato and spinach are also added.

Orzo is optional. Also known as risoni, this short cut pasta makes a great side for the dish.

To prepare, simply cook the fish in the Greek seasoning and top with spinach, tomato, and cheese. Serve over orzo if that is your side of choice.

Of course, this recipe works well if you love Greek flavorings, but there are several other paths you can take when it comes to the preparation of grouper. Here are some examples:

Grilled Grouper with Lemon and Herbs: To prepare this dish, sprinkle dried fennel seed, basic garlic, and parsley over the fish. Drizzle with olive oil and lemon juice to give it a great, fresh, flavor.

Grouper Caprese: Grouper Caprese is made by alternating slices of fish, tomatoes, and mozzarella and put a basil leaf between each layer. Drizzle with extra virgin olive oil and season with salt and pepper to taste.

Grilled Grouper with Oranges and Olives: This dish also features a Mediterranean flavor. The fish is charred, and the recipe is enhanced by onion rings, zesty tangerine and saline olives.

Lemon Butter Grouper Fish Tacos: Grouper also works well in tacos. Include lettuce, tomatoes, cheese, and your favorite dressing for a fun meal your whole family is sure to enjoy.

Grouper in Greek

It should come as no surprise that grouper is often prepared with a Mediterranean flavoring. Types of the fish can be found in the Mediterranean waters of the East Atlantic Ocean. When caught by fishermen, these are considered prize catches.

With an emphasis on health, the Mediterranean diet is gaining in popularity. It has foods that are high in omega-3s and healthy fats like fish, olive oil, nuts, grains, legumes, fruits, and veggies. Grouper is low in calories and cholesterol and it is high in calcium, protein, and iron.

Other healthy ingredients include spinach which is a good source of Vitamins K, A and C and folate. It is also rich in manganese, magnesium, iron and vitamin B2.

Tomatoes are rich in antioxidants, so they are effective in reducing the risk of heart disease and cancer. They are also a good source of vitamin C, potassium, folate and vitamin K.

As compared to other cheeses, feta cheese is low in calories and fat. It also contains high amounts of B vitamins, phosphorus, and calcium.

Description

Ingredients

  • 4 (4 ounce) grouper fillets
  • 2 teaspoons salt-free Greek seasoning
  • Cooking spray
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 plum tomato, coarsely chopped
  • ¼ cup (1 ounce) crumbled basil- and tomato-flavored feta cheese
  • Cooked orzo (optional)

Instructions

  1. Sprinkle both sides of the fillets with seasoning. Coat a large nonstick skillet with cooking spray, and place over medium-high heat until hot. Add fish, and cook 3 minutes; remove skillet from heat.
  2. Turn fish; top with spinach tomato, and cheese. Return to skillet to heat; cover and cook 3 to 4 minutes or until spinach is hot and fish flakes easily when tested with a fork. Serve immediately over cooked orzo.
