You’re Going to Love This Cheddar Corn Bake Recipe

Cheddar Corn Bake Recipe

Ingredients:

1 stick butter, melted
1 large onion, chopped
1 small green bell pepper, chopped
1 small red bell pepper, chopped
3 eggs
1 cup sour cream
1 can (16 oz.) creamed corn
1/3 cup yellow cornmeal
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup cheddar cheese, shredded

Directions:

1. In a medium sauté pan, heat 2 tablespoons of butter over medium heat.

2. Add onion and peppers and cook until softened, stirring occasionally.

3. Remove from heat. Combine remaining 6 tablespoons butter, eggs, and sour cream in a large bowl. Whisk together until smooth.

4. Mix in corn, cornmeal, salt and pepper. Stir in cheese and onion−pepper mixture.

5. Turn into a 2−quart buttered baking dish. Bake in a preheated 350 degree F oven for 30 to 35 minutes, until puffed and golden.

Other Ways to Use Shredded Cheddar Cheese

Bags of shredded cheddar tend to be quite large, so there's a good chance you'll have leftovers after preparing this recipe! There are tons of ways to use shredded cheese; one of the easiest ways is in a sandwich. Make a grilled cheese or a melt, and pretty soon all of that leftover cheese will disappear!

There are also a number of soups you can use shredded cheese in. Shredded cheese is easy to add, and it creates a great cheese pull within the soup! Cheddar bacon, cheesy broccoli, and potato and cheddar are all examples of soups that have cheese in them.

Making loaded potatoes is another way to use leftover shredded cheese. Make your baked potatoes in your preferred way, then top with the cheese during the last few minutes of cooking or while still hot. Better yet, let everyone in your family decide how much cheese they want on their own potato! Some people like it really cheesy, while others just like a little bit of cheese.
