You Need to Try This Fantastic Drunken Chili Recipe

Doesn't drunken chili sound like a lot of fun? This is a fantastic recipe for dinner any day of the week, and there's a good chance you'll be left with leftovers. Keep reading to find out all about our delicious drunken chili.

Drunken Chili

Ingredients:

2 Tablespoons salt pork, minced
2 pounds London broil, diced 1 inch
1 large yellow onion, minced
1 green bell pepper, sliced
1 Tablespoon minced garlic
1 Tablespoon jalapeño, seeded and minced
2-3 Tablespoons chili powder
1 Tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon red pepper flakes
1 bottle Dos Equis Amber (minus 1 sip)
¼ cup tequilla
1 28 ounce can diced tomatoes with juice
1 28 ounce can tomato purée
2 15 ounce cans dark red kidney beans, drained and rinsed

 

Directions:

1. Cook the salt pork until golden brown. Remove salt pork with slotted spoon and set aside.

2. Add diced meat to pan and quickly brown all sides, remove meat from pat and set aside.

3. In same pot add onions, peppers, garlic, and jalapeño and sauté until tender, adding oil if necessary.

4. Add chili powder, cumin, coriander, and red pepper flakes, stir to mix.

5. Add beer and tequilla to pot with vegetables and spices and reduce liquid by half.

6. Add diced tomatoes and tomato purée to pan, bring to boil, reduce heat and add the cooked meat and simmer with a lid on for 1 hour, stirring occasionally.

7. Remove lid from pot, add beans, and simmer for an additional 30 to 60 minutes or until meat is tender.

8. Add browned salt pork and adjust seasonings.

How Long Will Leftover Chili Last?

There's a good chance you'll be left with leftovers with this recipe. Having extra chili is never a bad thing; it's great to have on hand for a busy night. By following the instructions we give you here, you'll be able to make your drunken chili last as long as possible.

If you want to prepare large amounts of this chili for long-term storage, you can. Frozen chili will last for 4-6 months. How much you make in advance is completely up to you and how big your freezer is! Just remember that the longer chili is frozen for, the lower the quality will dip. Aim to have all of your frozen chili consumed within six months.

Refrigerated chili, including that which has been thawed, will last for 3-4 days in the fridge. Before reheating any leftover chili, make sure to examine it for signs that it has gone bad. Any mold or a bad odor is an immediate giveaway. Some mistakenly think that they can consume the non-moldy parts of food safely; we highly advise against doing this.

If your chili has an abnormal color or appearance, this is another sign that it has gone bad. Any spoiled chili is certainly a shame, but it should be discarded immediately. Don't take the risk; food poisoning is never a good thing to experience.
