You’ll Love This Slow Cooker Lemon Baked Chicken Recipe

Lemon is a common ingredient in both dinner and dessert. It introduces an acidic taste to any recipe, which can help balance out sweetness and saltiness. Despite having a distinct taste, lemon doesn't overpower a dish it's introduced into. That's what makes it such a great aid to a cook looking to add just the right amount of flavor to a dish.

This is a very simple recipe, with a small list of ingredients. Aside from the lemon, garlic and parsley add additional flavor. You'll need a 3.5- to 4-pound roasting chicken for this recipe, along with a five- or six-quart slow cooker.

It's important to keep in mind that this recipe will spend the first hour of the cooking process on high. In total, it will take approximately five and a half hours to cook. If you're uncertain if the chicken is done, insert a food thermometer to test the internal temperature. Make sure to insert the thermometer far enough into the chicken, otherwise you won't get an accurate reading.

You'll also need some string on hand to tie the legs together. You don't need any kind of special string; whatever string you have on hand that's suitable for cooking is sufficient. Feel free to adjust the seasonings to your liking! This is a great recipe to keep on hand for whenever you want a simple, yet filling, dinner.

Slow Cooker Lemon ‘Baked' Chicken

Ingredients:

3½– to 4-pound roasting chicken
2 tablespoons olive oil
1 lemon, halved
2 garlic cloves, minced
1 teaspoon dried parsley
1 teaspoon salt
½ teaspoon pepper

Directions:

1. Pat chicken dry with a paper towel; rub with oil. Place lemon halves inside chicken; tie legs together with string and tuck in wing tips.

2. Place chicken in a greased 5-6 quart slow cooker. Sprinkle with seasonings.

3. Cover and cook on HIGH for one hour; reduce heat to LOW and continue cooking for 4½ hours or until a thermometer inserted into thigh registers 180 degrees.
