Oven Fried Pork Chops and Mashed Potatoes

Ingredients:

3 Tablespoons butter
1 egg
2 Tablespoons milk
1 cup packaged cornbread stuffing mix, crushed into coarse crumbs
4 pork loin chops, cut ½ inch thick

Directions:

1. Place butter in a 13x9x2 inch baking pan, heat in a preheated 425°F oven about 3 minutes (or until butter melts). Remove from oven.

2. In a shallow dish, beat egg with a fork. Stir in milk.

3. Place dry stuffing crumbs in another shallow dish.

4. Dip pork chops into egg mixture, coating both sides.

5. Coat both sides of each pork chop with the cornbread stuffing crumbs.

6. Place pork chops in the baking pan with the butter.

7. Bake for 20 to 25 minutes, or until tender and juices run clear, turning once.

8. Serve with mashed potatoes. Makes 4 servings.

While pork chops are baking, prepare mashed potatoes.

Mashed Potatoes Ingredients:

2 pounds potatoes
½ cup half-and-half
3 Tablespoons butter
Salt and pepper

Directions:

1. Peel potatoes and cut into medium sized chunks.

2. Place potatoes into a large pot, cover with cold salted water.

3. Bring to a boil, reduce heat and simmer for 15 minutes or until tender when pierced with a fork.

4. Drain potatoes, return to pot. Season with salt and pepper to taste.

5. Add half-and-half and butter. Mash with a potato masher until smooth.
