How to Make Delicious Mexican Breakfast Casseroles

If you're looking to spice up your weekday breakfasts or bring something a little different than a fruit platter to your next potluck brunch, you may want to save these Mexican breakfast casseroles. With their cheesy, spicy flavors, these dishes are sure to become favorites among family and friends. And what's better, they are simple to make and you can prep all the ingredients the day before. So, pick your favorite recipe or even opt to make both to allow for more options.

Mexican Breakfast Casserole

Ingredients:

8 large eggs
6 tablespoons milk
2 tablespoons butter
3/4 teaspoon salt
1/4 teaspoon pepper
1 4 ounce can of green chiles — chopped
1/2 cup diced jalepeno peppers
2/3 cup extra-sharp cheddar — shredded
(add sliced tomatoes for garnish)

Directions:

1. Preheat oven to 350 degrees Fahrenheit.

2. Put butter in an 8″ square baking pan. Place in oven until cheese is melted.

3. Slightly beat eggs, milk, salt, and pepper. Pour into pan.

4. Bake for 10 minutes or until eggs begin to set.

5. Sprinkle with cheese and chiles. Draw a wide metal spatula across the bottom of the pan several times to break up the mixture.

5. Bake, breaking up mixture again several times, for 5 more minutes or until of the desired doneness.

6. Serve with tomato sauce, ketchup, or chili sauce, if used. Garnish with sliced tomatoes.

Easy Mexican Breakfast Casserole

Ingredients:

1 dozen large eggs
1 box of frozen hash browns
1/2 cup water or milk
1 4 oz. can of diced Chile Ortega
1 1/2 cups of mild shredded cheddar cheese
salt and pepper to taste

Directions:

1. Preheat oven to 350 degrees Fahrenheit.

2. Grease a 9×13 baking pan. Cover the bottom of the pan with hash browns

3. Place cooked bacon or sausage on top of the potatoes if desired.

4. Add half of both of the cheeses and chiles on top.

5. In a separate bowl mix the eggs, water, and the other half of the chiles by hand.

6. Pour over the potatoes and top with the rest of the cheese.

7. Bake for 45-55 minutes. Check the center for doneness with a knife or toothpick.

Serve as is or top with sour cream and salsa. To adjust for spice, feel free to eliminate or add more green chiles and jalapeno peppers. If you have leftovers, cut them up and freeze them so you have an easy breakfast. Enjoy!
