If you are a lover of French fries, you should make poutine a culinary must. A popular dish in Canada, this is a mix of French fries, gravy, and cheese curds that is guaranteed to provide mouth-watering goodness.

No one is sure how poutine originated. Most believe its roots are in rural Quebec during the mid 1900’s. Many say a customer in a restaurant called Le Lutin Qui Rit requested cheese curds on his fries, to which the owner replied, “That’s going to make an awful mess.”

Regardless of the dish's specific origins, someone thought it would be a good idea or poutine wouldn’t be the popular snack it is today.

Originally, the dish was made with only fries and cheese curds, but later on, gravy was added and that’s when it was officially called ‘poutine’.

The recipe we offer here is pretty basic, but it does include the addition of bacon, pepperoni, and sausage, which can make the snack heartier. Also, while we recommend using frozen fries, you can always slice your own from a baked or sweet potato. Using frozen fries will make the dish easier to prepare and many will argue that it is just as tasty.

Once the fries are cooked, simply top them with the cheese and meats of your choice. We recommend cheese curds or mozzarella, but you could add cheddar or any other cheese you prefer.

And while we add bacon, pepperoni, and sausage, any meat can be added, but we think red meats will provide a perfect complement to make a meat and potato style meal.

Ground beef makes another tasty alternative.

But what will really make or break the dish is the gravy, and here we recommend making your own over using store bought. Our recipe (which is included) calls for beef bouillon and Worchester sauce as the main flavorings. Then add flour to thicken as well as butter and water to add taste and consistency.

Although you can use any flavor gravy you choose, we think a rich meaty taste will serve as the perfect complement to the fries. Another suggestion might be a mushroom gravy, which takes a similar recipe but includes the addition of actual mushrooms.

You can also serve poutine as a side if you want, although it's less common. We recommend serving it with a hearty meat dish. Ingredients

Gravy:

  1. 2 Tablespoons butter
  2. 2 Tablespoons flour
  3. 1 1/2 cups water
  4. 1 cube beef bouillon
  5. 1/2 teaspoon Worchestershire sauce

Poutine:

  1. 1 bag frozen french fries (about 3 pounds)
  2. Cheese (cheese curds or cubed mozzarella)
  3. 2 cups cooked crumbled bacon, pepperoni or sausage

Instructions

  1. Bake french fries according to package directions.
  2. In a medium saucepan over high heat, melt the butter.
  3. Whisk in flour and stir for one minute. Whisk in remaining ingredients.
  4. Bring to a boil, then reduce heat to medium. Cook for 5 minutes, whisking frequently until smooth
  5. Season gravy with salt and pepper to taste. Makes 1 1/2 cups of gravy.
  6. To serve : place hot french fries in bowl. Sprinkle with a handful of cheese then pour hot gravy on top. Sprinkle with crumbled bacon, pepperoni or sausage.
