Country Brown Bread

When Thanksgiving is coming for Americans, it's time to choose what recipes we'll use for our feast. The upcoming holiday provides a good excuse to try out recipes for side dishes and perhaps find new favorites.

Breads are very versatile and add a lot to your meal. They are delicious, and make us feel full and satisfied. Ingredients like whole grains help us meet our nutritional needs providing a wide range of B vitamins. Breads can be made with yeast or can be quick breads that get their leavening from baking powder and baking soda.

Today's brown bread recipe is a type of quick bread. It is slightly sweet due to the molasses and sugar added to it, but it is not necessarily a dessert — though if you'd like something similar, but closer to a dessert, these pumpkin molasses muffins or molasses cookies will do just fine.

This bread would be great served alongside the savory dishes in a meal for lots of contrast. Imagine it with glazed ham for a different sandwich.

The molasses in the recipe, along with the whole wheat flour, makes the loaves a rich brown color. Your best results will be if you use the bread flour for half of your flour as the recipe says. Bread flour is a higher protein flour than all-purpose flour and produces more gluten. Gluten provides the elasticity that makes bread rise and become delightfully chewy.

You might wonder if you can make substitutions in this recipe. What if you do not have bread flour, for instance? You can use allpurpose flour instead of bread flour, but know that it will not be quite the same texture. You can also substitute in some rye flour or pumpernickel instead of part of the whole wheat flour. This will give a different flavor and texture as well.

The milk in this recipe adds a nice bit of nutrition and flavor. Use whatever milk you have on hand in this brown bread recipe. Personally, I would use whole milk since there is no other fat in the recipe. Choose reducedfat or even skim milk to control calories.

If you wish to try non-dairy milk alternatives in this bread your results should still be delicious. Almond or cashew milk would complement the slightly sweet flavor of this bread. Nondairy milk would be a good substitution for people who are vegan or lactose intolerant.

If you are wanting to make a hearty quick bread to enjoy with an evening cup of coffee, try this recipe, and add about a half cup of dried fruit, like raisins, and a half cup of chopped nuts. That will add a little bit of healthy sweetness to your snack.

Another way to serve this delicious bread would be slathered with softened cream cheese or spicy apple butter. Whoever imagined that bread could taste so good? Those little details are welcoming to your guests and give extra meaning to the idea of comfort food.

This quick bread is versatile and would be great to serve any time of the day. It would be delicious served with sausages and eggs for a rustic country breakfast. It is so quick and easy you can have it ready to serve in no time.
