Even Kids Will Love This Parmesan Dijon Chicken and Garlic Broccoli Recipe

Many parents have faced the age-old dilemma of getting their children to eat their vegetables. Parents know that vegetables are an important part of a kid's diet, but it seems that getting a kid to understand this isn't all too easy. Many vegetables taste especially bitter to young kids, so that makes it extra difficult to get them to eat them.

Fortunately, this recipe should help. This delicious parmesan chicken and garlic broccoli dinner will have your kids cleaning their plates in no time! It doesn't require turning the broccoli into any sort of fancy dish; rather, this recipe incorporates garlic salt to mask some of the bitterness in broccoli.

Plus, your children can combine the broccoli with a bite of chicken for extra flavor. Whatever ways you can give broccoli more flavor will help make your job as a parent easier. If your kids are still being picky, even with the broccoli in this recipe, try adding some melted cheese. That almost always does the trick!

Parmesan Dijon Chicken and Garlic Broccoli

Ingredients:

¾ cup dry bread crumbs
¼ cup grated Parmesan cheese
¼ cup butter, melted
2 Tablespoons Dijon mustard
6 boneless, skinless chicken breast halves (about 1 ¾ pounds)
frozen broccoli florets
butter and garlic salt for broccoli

Directions:

1.  Heat oven to 375 degrees F. Grease a 13x9x2 inch rectangular pan.

2.  Mix bread crumbs and cheese in a large resealable plastic food storage bag.

3.  Mix butter and mustard in a shallow dish.

4.  Dip chicken in the butter mixture, then shake in bag to coat with crumb mixture.  Place in pan.

5.  Bake uncovered 20 to 25 minutes, turning once, until juice of chicken is no longer pink when cut through thickest part.

6.  While chicken is cooking, prepare broccoli according to package directions.

7.  Butter broccoli according to taste, sprinkle with garlic salt.  Serve with chicken. Makes 6 servings.
