Curry powder is a great way to introduce some powerful flavors into your dinners. Plain shrimp and rice doesn't sound all that exciting, but curried shrimp and rice is a different story. You'll be surprised how much a little curry powder can do to really spice up a meal, no pun intended!

Shrimp is a great addition to your diet. Seafood is often lower in calories and fat than meat, meaning it's a great pick for families looking to eat on the healthier side. It still comes packed with plenty of protein, so you'll be able to have strong muscles without eating lots of beef.

Shrimp is also easy to come by, regardless of where you live. One of the challenges when it comes to eating seafood is finding it. Not everyone is going to have access to the same types of seafood, especially if we're considering fresh seafood. With shrimp, you can find it in virtually any grocery store in the United States, fresh or frozen.

When choosing your shrimp, make sure it is sustainably sourced. Poor fishing and farming methods are damaging to our ecosystem and our health, so you should avoid supporting them with your wallet when you can. Take a stand for responsible practices, even if it costs you a few more dollars to do so.

Curried Shrimp and Rice

Ingredients:

1 Tablespoon olive oil
1 large onion, chopped
2 cloves garlic, chopped
2 teaspoons curry powder
1 cup long-grain white rice
2 1/2 cups water
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 pounds large shrimp, peeled and deveined
Additional 1/2 teaspoon salt and 1/4 teaspoon pepper
1/2 cup fresh basil, finely chopped

Directions:

1. Heat the oil in a large skillet over medium heat.

2. Add the onion and cook, stirring occasionally, until soft (about 6 to 8 minutes).

3. Add the garlic and curry powder and cook for 2 minutes, stirring often.

4. Add the rice, 2 1/2 cups water, 1/2 teaspoon salt, and 1/2 teaspoon pepper and bring to a boil.

5. Reduce heat to medium-low, cover, and simmer for 15 minutes.

6. Season the shrimp with 1/2 teaspoon salt and 1/4 teaspoon pepper and place them in the skillet, covering them in the partially-cooked rice.

7. Cover and cook until the shrimp are fully cooked, about 4 to 5 minutes. Add the basil, mix well, and serve.
