  • 1 1/2 cups all-purpose flour
  • 1 cup Honey Bunches of Oats cereal, crushed
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 ripe bananas, mashed
  • 1/3 cup vegetable oil
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, combine the crushed Honey Bunches of Oats cereal, flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together mashed bananas, vegetable oil, honey, egg, vanilla extract, and milk.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
