  • 2 cups durian flesh, frozen
  • 1 can (14 oz) coconut milk
  • 1/2 cup sweetened condensed milk (adjust to taste)
  • 1/4 cup honey or agave nectar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Chopped nuts or toasted coconut for garnish (optional)

Instructions

  1. Ensure the durian flesh is frozen. Remove the seeds and cut the frozen durian into smaller chunks.
  2. In a blender, combine the frozen durian chunks, coconut milk, sweetened condensed milk, honey (or agave nectar), vanilla extract, and a pinch of salt.
  3. Blend until smooth and creamy.
  4. Transfer the blended mixture to a lidded container and place it in the freezer for at least 4 hours or until firm.
  5. Allow the durian coconut ice cream to soften slightly at room temperature before serving.
  6. Scoop into bowls or cones.
  7. Garnish with chopped nuts or toasted coconut if desired.
