Deep Dark Chocolate Cookies

Ingredients

  • 8 oz. bittersweet baking chocolate squares
  • 3 large egg whites, room temperature
  • 2 cups powdered sugar, divided
  • 1/2 cup cocoa powder
  • 1 tbsp. corn starch
  • 1/4 tsp. salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Melt chocolate in bowl in microwave, stirring twice. Cool slightly.
  2. Using electric mixer, beat egg whites until soft peaks form. Gradually beat in 1 cup sugar until smooth and shiny.
  3. In separate bowl, whisk 1 cup sugar, cocoa powder, corn starch and salt. On low speed, add dry ingredients to egg mixture and mix until combined.
  4. Stir in melted chocolate and chocolate chips.
  5. Place 1/2 cup powdered sugar in bowl.
  6. Roll 1 rounded tablespoon of dough into powdered sugar and place on greased cookie sheet. Bake at 350 for 10 minutes.
