Easy Chickpea Curry

Ingredients

  • 1 can of Chickpeas
  • 1 can of Coconut Milk
  • 2 tbsp of Curry Powder
  • 2 cloves of Garlic
  • 1 of Onion
  • 1 of Tomato
  • 1 bunch of Cilantro

Instructions

  1. In a large pot, sauté the onion and garlic until soft.
  2. Add the curry powder and stir until fragrant.
  3. Add the chickpeas, coconut milk, and diced tomato to the pot and bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
  5. Serve with fresh cilantro.
