Ingredients

  • 1 cup long-grain white rice
  • 1 3/4 cups chicken or vegetable broth
  • 1/2 cup tomato sauce
  • 1/2 onion, finely chopped
  • 1/2 bell pepper, diced
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat a little oil, and sauté the onion, garlic, and bell pepper until they soften.
  2. Add rice and sauté for a few minutes until it turns slightly golden.
  3. Add the tomato sauce, chicken or vegetable broth, and spices. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until the rice is tender.
