This chicken in orange sauce is reminiscent of what you might enjoy from a Chinese restaurant. While ordering takeout from a Chinese place is great, sometimes it just isn't cost-effective. Plus, a lot of Chinese takeout has a high amount of sodium. For those of us watching our sodium intake, it's better to make these dishes at home.

That's where this recipe comes in. If you're really watching your sodium, use low-sodium soy sauce instead of regular soy sauce. The taste will still be similar, but you won't have to deal with the consequences of straying off of your diet. The orange juice and ginger will provide plenty of extra flavor, with or without the salt.

White rice is cheap and readily available. In fact, you probably already have some in your pantry! If you want your rice to be as fluffy as possible, make sure you wash it first. Washing your rice beforehand will remove any excess starch. Excess starch is what makes rice sticky.

Chicken in Orange Sauce Over Fluffy Rice


4 skinless boneless chicken breast halves
3/4 cup orange juice
1/4 cup brown sugar
1/2 teaspoon ginger
2 Tablespoons soy sauce
2 cups long grain white rice uncooked



1. Combine orange juice, brown sugar, ginger and soy sauce in a microwave safe bowl.

2. Heat until just warm, about 1 minute on high.

3. Place chicken in a baking dish and cover with sauce.

4. Bake at 400 degrees F for 20 minutes, basting with the sauce halfway through.

5. While chicken is baking, cook rice according to package directions.

6. Serve chicken and sauce over hot cooked rice.  Makes 4 servings.
