1 package (16 ounce) frozen spinach
3½ cups milk, divided

2 cups low-fat cottage cheese
½ teaspoon nutmeg

1 pound whole-wheat penne

3. Cook spinach according to package directions. Drain and refresh under cold water. Press out excess moisture. Set aside.
