Mexican pizza is an amazing variation. If your Mexican nights have grown boring with the same tacos week after week, then you need to switch up the menu and serve this recipe instead. This particular Mexican pizza uses refried beans and cheddar cheese for its main toppings.

Refried beans on a pizza may sound a little odd, but once you read through this recipe you'll understand our thinking here. We wanted to make this pizza Mexican from the dough up! Fortunately, it won't require a lot of effort on your part to make this recipe.

In fact, this is one of the easiest Mexican pizza recipes you'll find. The reason for that is that you're not making your own dough here. Instead, you'll be using pre-made pizza dough. You'll still have to roll it out, but that step is not as complicated as the media often makes it seem.

Mexican Pizza with Refried Beans and Cheddar

Ingredients:

1 pound fresh or frozen pizza dough, thawed according to package directions
1 cup prepared refried beans, regular or fat-free
½ cup prepared salsa
1 cup shredded Cheddar cheese, mild or sharp
½ cup pitted black olives, sliced into thin rounds

Directions:

1. Preheat oven to 400°F.

2. Roll dough out into large circle or rectangle about ¼-inch thick.

3. Transfer dough to a pizza pan or baking sheet.

4. Spread the refried beans all over the crust, to within ½-inch of the edges.

5. Top with the salsa, cheese, and olives.

6. Bake for 15 minutes until the crust is golden brown and the cheese is bubbly.
