The story, much like the Neiman Marcus cookie story, goes like this…a group of travelers were enjoying a wonderful meal in Mexico. They were so impressed by the authentic Mexican food, and this dish in particular, that they asked the waiter for the recipe.
Somewhere in the translation, it was lost on the travelers that it would cost them many American dollars to get the recipe. Not understanding, they agreed. With recipe happily in hand at the end of the meal, they were preparing to leave.
Ready to pay the check, they noticed they were charged $25,000 for the recipe. They may have ended up in a Mexican prison for non-payment, or they may have paid it happily if they were filthy rich. We’ll never know because the story doesn’t fill us in on what happened after the gasp-worthy moment when they looked at their check.

Mexican Casserole
A casserole is always a convenient dish to make. You can add any ingredients you would like to make a meal that will appeal to your family.

This dish has a wonderful authentic Mexican flavor due to the mix of ingredients that are added. These include buttermilk baking mix, refried, beans, salsa, and shredded cheese.
The baking mix and refried beans are mixed with water to make a crust-like consistency. Then beef, salsa, and cheese are added. Throw the whole thing in the oven and look forward to a meal with a great spicy kick.
Sour cream, lettuce, and tomato can also be added as cold toppings to take the flavor level up a notch.
Easy Mexican Dishes
And if your family loves spicy dishes, this is only one of many that are easy to make and sure to be a crowd-pleaser. Here are some others you will want to have in your arsenal.
Quick and Easy Tuna Tacos: These can be made in any variety of ways, as long as the essential ingredients are included; tuna and tacos! The recipe we are referring to calls for the addition of mayo, sour cream, cream, lemon, onion cilantro, and vegetable oil. Prepare ingredients for a meal that can be made in just 10 minutes.
Shrimp Ceviche: This meal is light, healthy and easy to make. It calls for shrimp, limes, lemons, tomatoes, cilantro, chili, cucumber, and onions. To prepare it, let the shrimp marinate in the lemon and lime juice. Then toss with the remaining ingredients, refrigerate and serve.
Huevos Rancheros: Huevos Rancheros make a hearty breakfast, but they can be great any time of day. Start by cooking tortillas in oil until they are crisp. Heat salsa ranchera. Fry your eggs and put them on top of the tortillas. Top the whole dish with salsa ranchera and you have a meal your family is sure to love.
Easy Breakfast Burrito: You can make any burrito into a breakfast burrito. This one is especially delicious as it is filled with eggs, Mexican chorizo sausage and your choice of cheese. Sour cream and guacamole can be added as well.

Ingredients
- 2 cups buttermilk baking mix
- 1 cup water
- 2–15 ounce cans refried beans
- 1–2 lbs. hamburger
- 16 ounce jar salsa
- 3 cups shredded cheddar cheese
- Optional toppings: sour cream, shredded lettuce, diced tomatoes
Instructions
1. In large mixing bowl, mix baking mix, water and refried beans together.
2. Spread in a greased 9×13″ baking pan.
3. Brown hamburger in a skillet, drain of drippings.
4. Spoon browned hamburger over bean “crust”.
5. Spread with salsa and cover with cheese.
6. Bake at 350 degrees F. for 30 minutes.
7. Optional – serve with sour cream, lettuce and tomatoes as toppings.
