A tasty, quick and easy meal brings together the best of tacos and potatoes.

  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped red onions
  • 1/2 cup sliced black olives
  • 1 pint sour cream
  • Salt and pepper to taste

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes and pierce each one several times with a fork.
  3. Rub potatoes with a little bit of vegetable oil, and place them on a baking sheet.
  4. Bake the potatoes for about 50-60 minutes, or until they are tender when pierced with a fork.
  5. While the potatoes are baking, cook the ground beef in a skillet over medium-high heat. Add the taco seasoning and water according to the packet instructions, and simmer for 10-12 minutes until the beef is fully cooked and the seasoning is well distributed.
  6. Remove the potatoes from the oven, and let them cool for a few minutes.
  7. Cut a slit in the top of each potato, and fluff up the insides with a fork.
  8. Set out the cooked taco beef, shredded cheddar cheese, chopped tomatoes, chopped red onions, sliced black olives, and sour cream in separate bowls, and place them next to the potatoes.
  9. Serve the taco stuffed baked potatoes hot, and enjoy!

What to Serve With Taco Stuffed Baked Potatoes

These taco stuffed baked potatoes are going to be quite filling on their own, but if your family has a big appetite then we've got some side dish ideas for you. Some are pretty simple, while others require a little more time in the kitchen.

Nachos and cheese dip or salsa is a great idea. Since you're stuffing these potatoes with taco ingredients, why not keep the theme going? The crunch of a good bowl of nachos will contrast the softer texture of these baked potatoes in a lovely way. Plus, this will be a hit with kids.

Refried beans are a classic Mexican side dish that will pair wonderfully with these taco stuffed baked potatoes. They aren't the hardest thing to make, and they're sure to delight! You can even add the refried beans to your potato, if you want!

If simplicity is key for you, we understand. Sometimes, you just don't have the time or the energy to spend a lot of time in the kitchen. In this case, just serving some cottage cheese along with these potatoes will do just fine. Cottage cheese offers plenty of nutritional benefits, like a high amount of protein.
