Corn Fritters

Corn Fritters Recipe

Ingredients:

3 egg yolks
1 2/3 cups cooked or canned  whole grain corn
½ teaspoon salt
1/8 teaspoon pepper
¼ cup sifted all purpose flour
3 egg whites
6 Tablespoons vegetable oil

Makes 6 servings

Directions:

1. Beat egg yolks until light, then add corn, and next 3 ingredients.

2. Fold in stiffly beaten egg whites. Drop by spoonfuls into hot oil in a skillet.

3. Cook on both sides until brown and done.
