Gingerbread Cookie Recipe

Nothing says home like a good gingerbread cookie recipe filling the air with the wonderful spices that smell like the holidays.
This recipe is less spicy than many gingerbread recipes, making it a hit with little ones who don't usually care for heavily spiced cookies.
Gingerbread Men
Ingredients:
1 (3.5 ounce) package cook and serve butterscotch pudding mix
1/2 cup butter
1/2 cup packed brown sugar
1 egg
1/2 teaspoon baking soda
1 1/2 cups all-purpose flour
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
Directions:
1. In a medium bowl, cream together the butter, butterscotch pudding mix, and brown sugar until smooth. Stir in the egg.
2. Combine the baking soda, flour, ginger, and cinnamon; stir into the butterscotch pudding mixture. Cover and chill until firm (about 1 hour).
3. Preheat oven to 350 degrees F.
4. On a floured surface, roll dough out to about one eighth inch thickness. Cut into gingerbread men with a cookie cutter. Place cookies 2 inches apart on the greased baking sheets.
5. Bake for 7 to 10 minutes until edges of cookies are golden. Cool on wire racks.
