Cheesy Shrimp and Rice Casserole

Ingredients:

1 onion, chopped
1 teaspoon minced garlic
1½ pounds peeled medium shrimp
1 cup fresh mushrooms, chopped
cup chunky salsa
1½ cups shredded reduced-fat Cheddar cheese
1 tablespoon Worcestershire sauce
½ cup evaporated skimmed milk
1 bunch green onions (scallions), chopped
3 cups cooked rice

Directions:

1. In a large nonstick skillet, sauté the onion, garlic, shrimp, and mushrooms over medium-high heat for 5 to 7 minutes. Add the salsa, cheese, Worcestershire sauce, milk, and green onions. Stir in the rice, and cook until cheese is melted and well combined, about 10 minutes. Serve.
